First up, WELL DONE Hopefuljoy. It just shows it was meant to be - although I agree with other posters - your managerial team do seem somewhat exceptionalSo :T for them.
greenbee - I have made yoghurt using UHT milk for the first timeIt turned out perfectly well, and will definitely be my 'goto' way of making yoghurt in the winter. Much, much quicker and depending on what is 'cooking for tea', can be made whilst I am in the kitchen anyway

Dinner on Tuesday night was soup. I made Spinach and mung bean soup. It was very tasty, and I would make it again. Picture here;
Dinner last night was Easy Sweet Potato and lentil curry served with basmati rice and green beans, topped with a little toasted coconut. A really simple recipe (although I think the ratio of sweet potato to lentils may be a little off) and one that I would happily make again. I have topped the curry with a little of the new batch of HM yoghurt and some onion seeds. Picture here;
Dinner this evening should be some type of Buddha bowl. However, I do have plans for meeting a friend at lunchtime (weather depending), so it could end up being a sarnie for DP
Right, I'd better shift a tail feather.

satchmo - you lucky thing, spotting a rainbowI was just grateful that I dodged the showers at lunchtime, as they had been heavy and at one point, there was a rather spiteful hail shower
I got some YS'd mushrooms today from mrW that I need for a dish for next week. I also bought some tinned chopped tomatoes from h0me bargins - they are the 'maxi' brand that you sometimes see in a$da, and I usually get them from b&M @ 5 for £1. Anyway HB had them for 20p a tin, so I got 10 tins. They are really good tomatoes - and the tins have the white lining.... like some of the more expensive brands........well worth 20p
I met up with my friend for lunch and I was able to treat her to a lovely sandwich :j (honestly, that was all she wanted to eat - I would have stumped up for something fancier). She's a good soul and I had a ball chatting with herTime just flew
She is, however, the antithesis of 'simple living' - so I have to pick my conversation topics very carefully

Due to a simple lunch, I ploughed ahead with a Buddha bowl for dinner. Bit of a change of plan, as I have some eggs that need using up - so it was closer to the 'spirit' of a Buddha bowl than I sometimes make, as in, there were more 'use-ups' of certain thingsPic here;
It's not a great pic, but there was cous cous with; fried onion, carrot and swede mixed into it. This was topped off with some spinach that had been briefly sauted with some red onion (although frankly, the pic makes it look more like boiled red cabbage), then this was topped with an omelette, and some 'cauliflower cheese sauce'. This was made by heating up some milk with a bayleaf and seasonings, then putting some defrosted cauli in. Blitzing it with the stick blender and grating some cheese in. It was quite thick at this point, but I put some cornflour in to thicken it a little more. I topped all this off with some toasted sunflower and pumpkin seeds and some lemon zest that I had forgotten to put into the cous cous! :rotfl: Lots of flavour and differing textures - a nice mealAnd DP was pleased that I had a 'light lunch' so made him a 'proper' tea
We watched the first part of 'Walking the Nile' whilst we ate. Mmm, bit intense, but nice to see things that I doubt I'll get to see 'in the flesh' in my lifetime.
Today I am grateful for these 3 things;
for enduring friendships with good souls that would help you in a heartbeat, as you would them -
that the rain-stopped and the sun shone, just at the right moment -
for the scent of bay......

Hello my friends, my management team is indeed fantastic! The head called me into his office yesterday, paid me lots of compliments about my work so far and said he would do whatever is necessary to keep me. In 28 years of full time work I've never known anything like it and am incredibly grateful.
It seems like the wind is making itself felt everywherd today. There were wheelie bins all over the place when I woke up. Happy days!!
Death in paradise is on tonight, one of the sunny programmes which keeps.me and DD going through the winter! So see you later folks!!With family, friends and pets (or any combination of them) life will be fine!
