Weighing in at 151.2lbs which is exactly 3lb lost this week. Less than 1lb to go until I've lost my first stone. Been good the last week but the next few days might be a little rockier as I have two parties to do for my daughter and I'll have a piece of birthday cake. I'd like to work it into my calorie allowance but it'll be a bit of a rough calculation.
My current favourite recipe for losing weight is prawn creole - one for the menu list Birdie if its still going - a portion contains about 160 calories and is very filling. I used to have it with a crusty bun but I realised I didn't need it. Is a batch cook recipe, it makes about 10 portions and freezes well.
One head of celery (about 8 stalks)
6 peppers
6 onions
8 tomatoes or 3 tins chopped tomatoes (not quite as nice with the tins but a lot less work)
fresh thyme (about 6-8 sprigs)
1/2 tbsp lemon juice
fresh parsley (I use half a bunch that comes in the packet so about 6g?)
2 tbsp tomato puree
2 fresh chillis or 1 tbsp chilli puree
4 cloves garlic or 2 tbsp garlic puree
salt & pepper
3 bags (think these are 225g each) of frozen king prawns (could use fresh, frozen are cheaper)
Defrost the prawns if raw, don't defrost if pre-cooked (if spread on a plate rather than bunched in the bag they'll be done by the time you've chopped all the veg). Chop the onions, celery and peppers very finely, add to a large pot with the oil and fry until softened but not soft. Add the crushed garlic/garlic puree, tomato puree, chillis/chilli puree and lemon juice, stir to coat everything and cook for another minute. Add the chopped tomatoes/chopped tinned tomatoes, thyme and salt and pepper to taste. If using chopped fresh tomatoes add enough water to cover the mix without making it a soup, just to make sure it's simmering not frying. Simmer for 20 minutes.
If your prawns are already cooked and remove from the heat and divide between storage containers for potions. When completely cool divide the frozen prawns between the tubs and freeze until needed.
If your prawns are raw and now defrosted add them to the pot still on the hob and cook for 3 minutes. Remove from the heat and divide between tubs. Can be frozen once cold.Debt January 1st 2018 £96,999.81Met NIM 23/06/2008

Checking in with a 2lb loss this week - super chuffed with that and only 1.5lbs off losing a stone. Am away visiting my sister this weekend so that will involve a meal out, but she's a healthy bod so shuldn't be too bad. Then she's running a 10k on the Sunday so hopefully cheering her on will burn some calories!

No worries Shrimpy and the best bit is they don't skimp too much on the chocolate!
