Clearing the freezer for Christmas

    I have lots in my freezer to use up :) Some mystery unlabelled meals too !!

    krustylouise - I take stuff out of the freezer well in advance of needing it so it defrosts in the fridge. I am OCD about being organised - have a menu plan and stock lists - helps me to be very frugal.
    WantToBeSE - rub cooking marge/butter into flour - stir in sugar and - optional - add oats.
    6 oz plain flour 4 ozs fat 3 ozs sugar - I add oats to pad out - cheap.
    put crumble mix on top of fruit - bake at 180 for about 50 mins - depends on oven.

    Went looking for bacon, but have actually used it all! So not having carbonara tonight! Having paprika chicken instead, using some chicken thighs I found in the freezer :)





    This is a really stupid question, but if you guys take stuff out of the freezer that day, how do you defrost it, safely, in time to use that night?


    Louise- normally I leave it out on the kitchen counter and its defrosted by the evening. Or if I want to defrost in a hurry, I put it in a sink full of hot water (its already in plastic air tight bags) and its defrosted within an hour.


    Just waiting for the health and safety brigade to yell at me now :D

    Thanks Flo, I'll make that tonight and serve with custard. Its great to have you back by the way, I missed your photos on the 'what's for dinner tonight' thread :)

    Me too. I have a few bags of 'mystery surprise' at the bottom of my freezer that I'll use up after Christmas.

    Mr F is home - got him to fish around in the depths of the chest freezer. He got out some HM Yorkshires and a bag of Turkey Steaks - be a nice dinner for Sunday.

    Just did a stock take update and there's still plenty in the freezer here. I appear to have a lot of HM stocks for soups, sauces and gravies. I must invest in some of those pour bags instead of putting stock in clip boxes - they take up so much room.

    Apart from the huge duck for xmas day and loads of veggies, I'm not too bad.

    Found several portions of chocolate cake :D That'll make a nice pud for my boys sometime over the hols.

    I started running my freezer down in middle of November....last food shop was 15 November, only thing I've bought since then is fruit & veg and freezer is still full!! (I keep very good cupboard stores)

    Took a piece of pork shoulder out last night so that's going in the slow cooker overnight tonight so I'll be having pulled pork for next few days.
  • Been a few random dinners here usin up all of the part bags lurking in the bottom of the chest freezer! Tonight was a few oven chips, some ribs, spicy prawns and onion rings. Freezer is quite organised and will be more space after this weeks meals. Got most of my Christmas bits in there already, just need the massive chicken, don't like turkey, and a loaf of bread to have in just in case!

    Well I managed to get 2 portions of steak and ale casserole out of the freezer for dinner last night :)
    but had 12 portions of chilli beef and beans to add :eek:


    Dinner today was omelettes, lo potatoes fried and salad - so nothing out the freezer.


    BTW - If it's something that needs cooking I usually get things out the day before and put in the fridge to defrost.


    Most of the stuff in my freezer is pre-cooked however, as I batch-cook all the time, so I put it in the micro, in it's bag, in a plastic container and 10 mins on defrost. Then gently heat in a pan. hth

    I don't really have a recipe. I just get whatever white fish you want (defrosted) and cut into the same sized 'finger' shapes.


    Roll into flour, then egg and then breadcrumbs and fry on a medium heat. 4 mins on each side should do it, depending on how big/small you cut them.
