    Morning all

    Pizza worked out great last night, couldn't be bothered with the faff of doing something different for myself so just made it as usual but just ate the toppings off and and left the dough and was quite happy with that

    Not sure what we're having today yet. I have to go throug fridge and freezer and make meal plan and shopping list.

    Lunch will be butternut squash soup I made on Friday, just the thing while the wind is howling around the house.

    You're not alone in finding it hard to eat enough veg (eh wiz?;)) but I'm convinced that it's SF veg (and planning) that makes all the difference. If you like sweet veg, why don't you have beetroot? I buy one of those vacuum packs most weeks. It's a good idea to keep loads of pickles in like cornichons, peppers in brine, pickled onions in sweet vinegar and pickled cabbage. This week I'm going to make a big pot of braised red cabbage for freezing in portions. That's quite sweet as it has apples and cloves in it. I adapt one of Delia's recipes but ignore the fact that cooking the apples is meant to be synful.


    I like green beans done with a French recipe. So you cook your beans in the usual way, refresh under cold water (?? not sure why I think it keeps them green). When you're ready to eat them fry them with some crushed garlic and chopped bacon/lardons if you have any.


    My EE plan for today:
    B: NA Ribena, HEB toast, scrambled eggs, HEA milk for teas
    L: ham, bubble & squeak, pickles
    D: roast beef, SW roast potatoes and parsnips, cabbage, carrots, cauli, broccoli
    Syns: squirt of HP sauce, gravy, tsp of horseradish, weekend wine.:)


    Not that I approve of sneaky, midweek weighing ;)but good luck for this week's WI annie, hope you get your shiny.


    Some really good batch cooking going on with you lush. A great help now you're back at work.

    Morning (just) lovelies! I wish I could say I got the benefit of an extra hour in bed, but toddler decided today was an early wake-up (some days we have to get her up but mostly she gets up herself and loudly announces 'I awake!'). Today the announcement was at 5am :eek:

    Anyhow, well done to everyone on the challenge, 12 stone is amazing :j

    Shala, can you put me down for 14lbs for Santa please? Might be a bit optimistic since I am currently not feeling like riding on the wagon, but hopefully setting a big target will be the kick up the backside I need ;)

    Does anyone else struggle to get fried eggs right in frylight? I tried to tell hubby we need a new pan but he said that he can't get the tops to cook without oil to splash over them, and the whites kind of mix with the spray at the edges? Perhaps I'll try myself, but hubby is pretty good at a few meals and I always get him to make my fry-ups when I fancy one :)

    Enjoyed the ghost walk in York too.. Have a good time Meg, hope it doesn't get cancelled!

    On a mega long shift at work.. Started noon yesterday and on till 5pm today (do get to go to bed ;)) boredom and not having prepared properly meal wise led to some naughty nibbles yesterday.. Which I didn't even enjoy! :mad: Mad at myself as have been feeling so positive lately, thought I'd turned that corner.. Never mind.. WI not till thurs so hope I've not blown it for a loss!

    Just had a quick catch up with you all.

    Meg - love York. Usually visit each Christmas for a couple of days with DH but sadly we won't be able to make it this year. :( So I want to hear all about your trip so that I get my 'York fix'. :D We've done a ghost walk too and thoroughly enjoyed it - I was a bit dubious about going on one but really pleased I gave it a go. You sound as though you are going well prepared too. Where are you staying? We usually go to TL Micklegate. Have a lovely time.

    Maman - another vote for Delia's Red Cabbage here (made SW friendly of course ;)). Was commenting only this week to DH that we need to make another batch for freezer.

    Sorry I cannot remember who mentioned pizza bases - we used the Asda Be Free Wraps (1 hexb) as base. They are a bit cardboardy to use just as a wrap but weren't too bad for pizza base. DS said that he wouldn't call the end result a pizza but more of an 'open wrap' but nothing wrong with it.

    Annie - hope you get that elusive shiney this week. :D I have a feeling that my 4.5 shiney is going to be a challenge :D

    Having a workmen free day today and had planned to get all sorts of catching up done - just not happened. :(

    Really bad day yesterday but due to circumstance beyond my control I had not very good day really. Don't do brekkie much anyway but I am at home most days and can get fruit etc. Yesterday the first I had was an apple at 2pm, Ryvitas + feta + tomatoes at 4.45 then around 9pm it was turkey steaks in freeish sauce with little onions, mushrooms, peppers and brocolli and potatoes, 4 squares of choccie then around 10pm I had a small bowl of Philleas Fogg bubble crisps (cheese and new york deli relish) oh wow they were delish and a bottle of Sainsbobs Low Alcohol Czech beer (1 syn) - haven't a clue how many syns, don't care and a line has been drawn.

    Today started with banana, then lunch 2 low fat sausages, beans and egg and fruitopolis yoghurt. Tea is going to be Pulled Pork (with shala's dry rub) veggies of some sort and then fruit.

    Oh just remembered Fried Eggs - DH invested in Ceracraft pan - fab fried eggs with the smallest amount of frylight - use lid during the cooking too but need to keep an eye out that the whites set and the yolks stay runny. DS says they are the best fried eggs he has had. ;)

    I can't bear greasy eggs so we don't use any oil at all for frying. We have a tefal pan so it doesn't stick but to get the tops to cook we put the lid on.. sounds weird I know but it really does work (I say lid but it's a random plate thing we have as we haven't got a lid)

    hope that helps.. you might have to experiment with times a bit to keep your yolk runny :drool:

    I eat beetroot out the jar like it's sweets :drool: love it :rotfl: and pickled onions..

    I think I just need to get into the habit of putting veg with my meals, it's not something I've done much before.. might try that red cabbage recipe thanks, I've just started eating savoy cabbage so it might appeal!

    Jalfrezi recipe from last night - I've added my tweaks in purple so that I can print it on here, so technically it's my recipe ;)

    1 onion, finely chopped
    3 garlic cloves, finely chopped (I used jarred)
    1 tsp turmeric
    1 tsp chilli powder
    750g chicken breast, chopped
    4 peppers, red and yellow, sliced
    400g can tomatoes (I missed this out and used extra passata and a bit of water)
    200g passata (see above I used 500g passata)
    2tsp ground ginger (missed this out)
    1tbsp ground cumin
    1tbsp ground coriander
    I also added 1 tbsp. garam masala
    Serve with 350g rice, 1 red chilli and fresh coriander sliced to garnish

    - Stir fry onion and garlic with frylight for 4-5 mins until softened
    - mix turmeric and chilli in a bowl and coat the chicken pieces, add to the pan and lightly brown for 6-8 mins
    - stir in the peppers, tomatoes, passata and spices
    - cover and simmer for 20-30 minutes (add water if it becomes too dry)


    D. Campfire stew

    Keep looking at those ceracraft pans.. Might invest in one!

    I finish my eggs under the grill to firm the top of them.. Seems to work as always mess them up flipping them over..
  • I start my eggs in frylight and then add a drop of water to the pan before covering it (with a plate as I don't have a lid for my frying pan!). The steam cooks the tops beautifully.

    What a good idea P L M B L. I will try that because I too make a mess when I flip them over.

    Oh, I had a sneaky look on the scales this morning and guess what, ? I am still the same. I hope it alters by tomorrow even half a pound will do.:D
