    Cut the courgette lenghwise and scoop out the seeds; stuff with a sort of bolognaise type meat sauce so lots of extra veg including onions, tomatoes, mushrooms, peppers.

    I generally cook the courgette/marrow for about 20 minutes at 180 and then add the mince mixture and top with a bit of cheese.

    Put back into the oven and cook until the cheese has melted and browned a bit.

    I have a couple of questions about mince and chilli con carne:

    Does ALDI (or LIDL) sell mince with less than 5% fat(free)-I didn't see any in ALDI the other day-lowest I saw was 12%
    Also,has the SW site changed their chilli con carne recipe?After being off-plan for a few months,I looked up the recipe and it is different to what I used to do:there is peppers and plum tomatos added to it.If anyone has the original recipe I would appreciate it.
    Apart from this,the rest of the recipe seems to be the same,but is anyone sure?Previously,I think it had tinned chopped tomato instead of (fresh)plum tomatos.Can anyone confirm?Thank you.


    I have seen low fat mince in Aldi but it's not a regular line. I usually bulk buy mine when I see it YS in one of the other SMs but that's a bit hit and miss. I think browning it and draining off as much fat as possible is the next best option.


    I think you're right about the chilli. I've NEVER made mine with fresh tomatoes and they seem to have generally messed around with the recipe section. I have a few of those little SW books that come free with the magazine and I'm sure chilli's in one of those. Meantime, this looks OK:

    You ARE trying very hard wiz. Maybe you'll lose next week in a two week cycle. IIRC that happened to you before. I'm convinced you're fighting against the medication as your menus look spot on.:)

    B: NAS Ribena, baked beans, HEB toast, HEA milk
    L: pork, fried veg, beetroot
    D: gammon, new potatoes, green beans, cauli, broccoli
    Syns: I want to make cheese sauce but don't want the syns.:(


    I have a SC of lentil and veg soup cooking using the stock from the gammon. It's a dreadful day here and I need some comfort food. Planning to go out for a drink with a friend later too. Can't really be bothered but maybe I'll feel better when I get there.


    (sorry to be so miserable).

    Sorry for being so dumb maman - but can I ask what YS is in your last post. Have seen it mentioned here a few times but I cannot work it out. :o


    Having fish stick and boiled egg salad for lunch - shouldn't be too heavy for wi tonight. Bit bad having to have a wi on a bank holiday :p


    Enjoy whatever you are up to today. My plans for after lunch - clear out food cupboards and line them out with some stuff we bought ages ago from Ikea - better late than never is what I say. :D

    Afternoon :)

    Another late get up for us, we will have to start alarm setting or next week will be a serious shock to the system.

    Brunch today was mushroom, potato and onion omelette.

    Tea will be leftover savoury mince, with carrots, broccoli, cabbage and asparagus.

    I have strawberries, pineapple and kiwi in for a mid afternoon fruit salad.

    Top Boy is sleeping out tonight so I'm gonna go out for some late weekend wine, have a fair few syns banked so hopefully shouldn't scupper me too much.

    HEXA - Milk
    HEXB - Not sure, maybe a couple of benefit bars.

    Syns - vino :o

    Pulled pork recipe - I've used this one before http://www.slimmingeats.com/blog/slow-cooker-pulled-pork#.U_m7jxt0w5s but it does have a lot of ingredients and you cook the pork in the sauce.

    What I've done lately is cook the pork in the slow cooker with a dry rub.. so mix all the ingredients below, rub over the pork joint and pop in your slow cooker for a few hours (depends on the size of your joint) when it's done pull the pork apart with two forks so it shreds.


    Rub
    1 tbsp. brown sugar (syns?)
    1 tbsp. paprika
    2 tsp salt
    1 tsp black pepper
    1 tsp cayenne
    1/2 tsp mustard powder

    and then use the SW BBQ recipe separately and pour it over the shredded pork, serve with wholemeal roll (heb) or on top of a jacket potato..


    BBQ Sauce
    1 onion, diced and saut!ed (I use 1 tsp onion powder instead saves the bother)
    1 tsp mild chilli powder
    227ml passata
    2-3 tbsp. balsamic vinegar
    2 tbsp. sweetner
    1 tbsp. Worcestershire sauce
    1/4 tsp mustard powder

    Put all the ingredients in a pan and simmer until thickened

    I also add some liquid smoke that I bought off ebay to add that smokiness.

    I think it's a really easy recipe to play with and change to your tastes, I try not to add too much vinegar as it's quite strong!!


    Hope that's ok - i'm not very good at explaining recipes (or following them!!) :rotfl:

    Wish we had invested in a SC years ago. Made a point of storing it out on the worktop so it reminds us to get into the habit of using it rather than being hidden in the cupboards to be disposed of years down the line when we are having a clear out. :D

    You don't need liquid to use a SC - joints are lovely done in them. I usually put screwed up balls of foil in the bottom and stand the meat on them then any fat drips to the bottom.

  • Soggy afternoon here. Have done a load more housework - deep cleaning the living room today. House is looking pretty shiny now.

    Weighed this morning -2lb. Pleased with that - especially considering I had -4lb last week AND a sticky toffee pudding!

    Menu today:

    Brunch - Strawberry granola again. I really love this, it's definitely my go-to weekend breakfast

    Dinner - Pot roasted beef with veg and my new SW recipe spuds.

    I've made some SW muffins (ham, leek and cheese) and a lemon drizzle cake so not counting Syns today :rotfl:

    YS is a term I've picked up on mse boards. It took me ages to work it out too.:o It means Yellow Stickered i.e.reduced.

    Afternoon all,

    I'm such an emotional eater! bah but after the weekend I am much more together with it today :)

    B: 3 egg omlette with a little cheese from HeA allowance filled with mushrooms, baby plum tomatoes and smoked ham
    L: 4 chicken nuggets (8) - wasn't really hungry and was soon pre-occupied with baking!
    T: roast gammon, mccain rustic chips (thanks maman!) 1 syn - only having 100g as I'll be filling my plate with steamed veggies, baked beans and a couple of poached eggs!
    supper: weetabix
    total 9 syn - enough left to cover a taster of my baking :)
    I keep forgetting we go on holiday on Saturday; we've bought a caravan (gone halves with the in laws) so we're there for a couple of days then off up to a holiday apartment we booked back in march for 5 days then back to our caravan for a few days! but food will be 95% cooked in the caravan/apartment so I'm going to be good :)

    need to sort my snacking out, its more thirst but i do anything to avoid drinking (hang over from youth issues mixed with the whole still not liking swallowing liquids since pregnancy) now the cooler weather is here i can use options hot chocs for my chocolate hit though yay:)
