Gingham Ribbon gave us this link to Galette au Choux (on one of her vegetarian meal planner threads) I've made it several times, its lovely.... don't throw the string away. You always need string!

half a jar of sauerkraut, half a cabbage finely sliced. Some onion sliced and sauteed. Some peppercorns some smoked sausage, bits of pork, bayleaf, small glass of wine, mushrooms etc. All in a pot and simmer a good hour. Brilliant and lovely with bread or potato
make double and keep a day or two, even nicer or freeze some0 -
quick stir fry with onion, bacon, mushrooms and croutons0

Ok - I re-signed to the riverford boxes at the good food show - well it WAS half price
- and I think I knwo how to use up most of what I got... APART from a savoy cabbage... what on EARTH can I do with that to make it palatable? We're not great cabbage eaters in the house - I guess I could wizz it up for the baby but I'm not seeing how she'll eat a whole savoy :rotfl:

You could steam it and then toss it in a little butter and grate nutmeg over it.

My brother steams it, then bungs it in a wok with brandy and probably something else...
Fry some bacon or pancetta, then add the cabbage and some stock, then braise for 10 minutes

I like it cooked in the oven with butter then with chopped bacon tossed in. This recipe was originally recommended by Gingham Ribbon and lots of Old Stylers raved about it, even those who don't particularly like cabbage:

Mmmmm bacon is do-able - I always have bacon from the butchers in the freezer
May try to get a joint of some sort out the freezer tonight for dinner tomorrow and do it with that... either that or get a flying fiend of some sort (depending on what the butcher has in

I use any dark leafy greens to do the following:
Chop your chosen leafy greens (kale, cabbage, chard, etc), a few tomatoes (about equal amounts), and some garlic. Fry in little oil until tomtoes softened and greens are wilted. Then stir in a dollop of tahini and a little more olive oil (just a smidge to loosen the tahini). Stir well and serve. Excellent.
You can use savoy cabbage just like white cabbage for coleslaw.
It's also great cut into short lengths and chucked into stir fries.0 -
savoy cabbage - right you can blanch it and cut it into strips the stir fry with garlic and onion or the holy trinity of garlic ginger and soy sauce.
the leaves can be used individually - blanch them and wrap around large meatballs. then add some cheese sauce and bake for about 35 mins.
savoy is actually quite lovely if cooked properly - in very little water and add some butter and black pepper! I like to shred mine but others tear it into peices.
you dont have to use it all fresh - you can blanch some and freeze it! just add to boiling water and cook for a few minutes - then drain toss in butter and pepper and serve - with roast dinner - lovely!0
