Debate House Prices

Why are chip shop chips always soft and mushy, not crisp?
Mostly because they've lost the art of good chip cooking.
Quite a few factors:
They're crisp when fresh, so if you have to wait for them to be cooked you stand a better chance. If they've sat around for 10 minutes or so, then they'll soften.
Vegetable oil, rather than lard-type oils, doesn't cook as hot as old-fashioned oils. These days most are more likely to use veggie-based, rather than old-fashioned lard/dripping, especially as the best fats aren't vegetarian, so they use veggie oils so the chips are suitable for veggies. I had to ask a chippy once "Is your curry sauce veggie?" and he replied "Yes, but the chips aren't as they're fried in animal fats" - many veggies don't think/realise that.
Chippy near me's good, but you can go through a lot of chippies trying to find a good one. Best bet's probably to try to find/try some award winning ones, at busy times so the chips are fresh from the frying.0 -

This is true. It's one of those situations where it's a self-fulfilling prophecy IFSWIM. If a shop is mobbed its chips will always taste good but if its quiet it'll have soggy re-heats.
Fish and chip shops don't seem so common in SW London compared with all the other types of fast food. The ones there are are mobbed. I just had to go and look again and saw the pure ones and was horrified. And then remembered it was this other one.
Fig leaves have cashmere joggers, which actually do look rather chic for keeping comfortable and warm at home. I cannot link here for some reason.0 -

I am not a chip person really, ( I wouldn't want chips weekly or monthly) but I don't mind a soggy chip occasionally.0
