What do I make with curly Kale?

  • Stir fry with bacon and garlic. Also, sure I heard somewhere that kale can become more bitter the longer it is cooked, so might be worth watching that.
    Healthy eating aim per day: 3 fruits, 3 or more vegetables, 3 low-fat dairy portions, 3 starch portions, 2-3 lean protein portions.
    Weekly aim: to include 2 portions of fish (one oily), some nuts, seeds, beans and pulses.

    oooh, I love kale, Kenyan staple dish is maize meal cake with kale (love kenyan food)...

    fry 2 finely chopped onions 'til golden/brown
    add ginger/garlic
    add kale
    add chopped tomatoes
    season with salt,pepper/spices
    simmer for 15-20mins

    Horrible tough stuff with a disgusting taste. Unless you know a better way of cooking it than me? Any good ideas?

    Many thanks for any suggestions as it's cheap and good for me if I can find a way of eating it!

    Apparently spraying it with frylight/oil and salt and baking in the oven makes it just like crispy seaweed from the chinese.
    Putting these winter preps here so I don't forget!

    You see bags of it finely sliced with Leeks in A**a - I've bought it on Whoopsie and just steam them in the top of my steamer over a pan of potatoes. Love it done that way!


    I think it's the Leeks that seem to 'sweeten' the Kale ...............
  • I buy it fresh from the market we all love it here cooked liked cabbage or fried with a hm Chinese meal or I use it instead of spinach in a spanakopita

    I make kale smoothies
    It is better to freeze kale before eating it ..it does something to it ..makes it sweeter ..or at least less bitter.

    so ..If I am using frozen kale ..I first crush the frozen leaves with my hands while frozen ..this does half the work.
    Then use hand blender and mix about a cup of kale ..which is as lot as they are all tiny bits with orange and apple juice ..maybe a bit more orange than apple ..I blend this for a while ..maybe 5 minutes I then add half a banana ..usually frozen as well.
    I imagine the taste would be a bit like an apple peel smoothie..I haven't tried an apple peel smoothie.

    As an added sparkle ..If I make this on a Summers day ..I add a dash of vodka ..like a kind of bright green frozen daiquiri.

    I think this is the healthiest way I know of eating kale ...which is a bit of a super Brassica to start with.
    I have let other people try this and they all say it is good.

    I think its tough too - it must the only veg I boil to death! I slice it very finely boil for at least twenty minutes! drain and put back in pan on the hob and add a good knob of butter and some white pepper (I dunno why but to me white pepper tastes better than black with Kale) then 'fry' that off until the butter starts to colour.

    So right, meritaten - it NEEDS white pepper and not black :D.
