What do I make with curly Kale?

My fruit & veg box had an enourmous bag and I've never used it before!:o
It also had a large bag of gorgeous mushrooms - so can i combine the two? Otherwise mushroom omlettes are looking likely tomorrow for lunch, with the rest being used in some batch cooking later.

You can cook kale like spinach - it doesn't break down quite so much as spinach though. I don't know any recipes though - I always use it as a side veg, or as a base on a plate with e.g. poached eggs on top.0

I like kale shredded, steamed and sprinkled with bits of crispy bacon or parmesan or fried garlic as a side dish, perhaps with plain grilled chicken and maybe some steamed spuds or rice.
I also sometimes cut it into long, thin strips and use it as a replacement for spaghetti.0 -

Yeah, I generally eat it on its own, too...Saute it with a little butter and black pepper... have it on the side of the omlette0 -

kale is nice chopped into a vegetable soup or broth, it is really more tender after it has had a touch of frost and it is very good for you0

My favourite way is to first remove the tough center rib, then boil it for a few minutes in salted water and drain. When cool enough to handle, squeeze water out of kale in handfuls and chop. Loosen the lumps of kale. Saute some garlic in olive oil, then add the kale. If the kale is still a bit too chewy, add a few tablespoons of veg stock, cover and let cook for a couple of minutes.
DH's favourite way is kale crisps. Cut ribs from kale, then spread in a single layer on a baking sheet. Brush with olive oil and sprinkle with salt. Bake at around 180C until crispy (doesn't take long... be sure not to let it burn).
