Right, this is it. Or rather, these are they. Both versions have been tested and the oven/casserole version has been approved by my Mum.
CORNED BEEF HASH
This simple and economical store cupboard classic can either be quickly fried in a pan or slowly cooked in the oven, when it is sometimes called a corned beef casserole.
Serves 2
INGREDIENTS
1 tin of corned beef
1 potato
1 onion
1 tablespoon of oil (if pan frying)
1 beef stock cube (if oven cooking)
125ml of water (if oven cooking)
METHOD
Cut the corned beef into 1cm (½ inch) cubes (see below). Peel the potato and chop it into 1cm (½ inch) cubes. Peel the onion and chop it into tiny pieces.
TO PAN FRY
Put the oil into a frying pan on a medium heat. Add the onion and fry until golden brown and softened. Stir frequently to stop it sticking.
Add the corned beef and potato. Fry until the corned beef starts to brown at the edges and the potatoes are golden brown and crisp. Stir frequently to stop it sticking.
TO OVEN COOK
Put the corned beef, onion and potato into an ovenproof dish with a lid. Add the stock cube and the water. Stir thoroughly.
Put the lid on the dish and cook in a preheated oven at 180°C, 350°F, gas mark 4 for about an hour until the potatoes are tender.
Remove the lid and cook for another 20 minutes until the top is browned.
ADDITIONS & ALTERATIONS
You can add all sorts of things to this basic recipe, for example, baked beans, chilli powder, garlic, herbs, mushrooms, spices, Worcestershire sauce.
Serve the pan fried version with a fried or poached egg and brown or tomato sauce.
The oven cooked version can be done with layers of sliced corned beef, onion and potato.
TIPS
It is easier to cut corned beef, if it has been chilled in the fridge beforehand. The acquisition of wealth is no longer the driving force in my life.0 -
I make mine by boiling chopped onions, carrots and a couple of large potatoes in beef stock until soft, then add corned beef boil for 5 mins and then I add potato flakes to bulk it out more cheaply-you only need a little
And seasoning of course0 -

This is what I do and my family love it(There are different versions!)
I brown 1 chopped up onion in a large pan with a little bit of olive oil and pepper to season(I dont use salt but you can if you like it) with an oxo cube(and gravy granules if you like) I dont use flour but you can if you like. I then put in a tin of corned beef and brown that for a minute or two.I add sliced carrots, broccoli, and potatoes cover with water and simmer in the oven for about 1 hr(longer if you like).0 -
Mines 1 onion browned off, the add 3 chopped potatoes to boil, 1 beef oxo, 1 tin of cubed corned beef and simmer until potatoes are cooked through.
Its more like a stew than a hash but its the only way i know as its been passed through my family.

Mine is, chop 5lbs of potatoes into cubes (about and inch), chop three carrotts and add two diced onions.
Boil together until soft and then add a tin of chopped corned beef and stir until mixed through.
Add salt and pepper to taste, some gravy granules and a squirt of brown sauce.GC Jan £318/£350, Feb £221.84/£300, Mar £200.00/£250 Apr £201.05/£200 May £199.61/£200 June £17.25/£200

The one I grew up with is bascially corned beef mixed in with mash!
But the one I do now is, cubed potatoes, sauted off slowly in frying pan with an onion.
Then add largish cubes of corned beef until crispy.
Eat like this, or pop in oven proof dish and into oven to ensure potatoes are cooked (depends on size of cubed potatoes), serve with baked beans.0 -
