For the scotch eggs i hard boiled 4 eggs by putting them in a pan of cold water, bringing it to boil, turning off the gas and leaving them in the water for 10 mins before running under cold water and unpeeling. I then wrapped them each in a quarter of the pack of Tesco finest sausage meat. After egg washing the balls I rolled them in a mix of flaxseed and grated Parmesan. 20 mins at about 180 degrees.
Today I had
B finished off the cauliflower cheese as it was so nice last night
L scotch egg and half an avocado
T will be haddock baked in foil with a little olive oil or butter, broccoli and cauliflower with cheese sauce to pour over.
I don't go past an aldi very often, however I work in a town with a Lidl so I will try and get some sausages there, as I believe they have low carb ones there too.0 -
Thanks for the recipe, sounds lovely and ideal for packed lunches.
I'm doing well, keeping to the programme. Managed a 30 minute walk and then 3.5 minutes on the trainer. Trying to add another 30 seconds each day.
I'm done for now though. :rotfl:0 -
I will have a go at the scotch eggs too, Treacle Toes, my weight has been up and down, emphasis more on the up, back to 11st this morning.

Today I went to the library to pick up the latest deliciously Ella book that I had reserved. I also got the Spiralizer cookbook and the art and science of low carbohydrate living. I have only just started the latter and it seems quite interesting, I like to research things like this to get a full understanding.
Today's meals are
B fried eggs and streaky bacon
L salad with chicken tikka, prawns and cheddar, cream sugar free jelly
T slow cooker meatballs from ditchthecarbs.com (OK, sauce very thin - sieved it for leftovers) zoodles which I pan fried and were yum!
I had a few Brazil nuts for snacks.
I had a food emergency this afternoon and had to go to coop as I ran out of double cream! I've been having it instead of milk in hot drinks and I really like it. I also bought a small loaf of bread for the freezer and my 8 year old daughter still likes sandwiches and the last loaf went mouldy (previously unknown!)0 -
I had a funny day yesterday, always find Saturdays an odd day, was going to have , gammon, eggs, garlic mushrooms and a few butter beans, saw a meal on line about 1pm, fried haloumi and eggs, was starting to feel hungry so soft boiled 2 eggs and pan fried the haloumi, about 80g,wasn`t hungry when it came meal time later so just had a bag of scratchings with raspberries and yoghurt later..Do I need it or just want it.0

I've decided to stop having cream in my tea and coffee, because of the calories it has vs carbs saved ratio.
Despite saying a few posts back that I'm not going to log food, I did today just to see how many carbs, protein, calories, fat I'm consuming in an average day. That's how I decided to give up the cream - everything else I'm happy with, my fat/protein/carb percentages were just as I'd want them. No more tracking after today though, too much like hardwork!!!
Meals today
B bacon and fried eggs
L roast chicken, broccoli, cauliflower and mushrooms
T salad with prawns, chicken tikka and a babybell.
S a few Brazil nuts.
Tomorrow I'm going to the local trampoline centre for a treat with my daughter before school restarts on Tuesday. I'm sure she'll want a McDonald's after so I've made my salad to sneak in already.0 -
Good morning everyone
Well I've stayed the same .....but given that I've been a bit lax I guess it's good that I've not put any back on.
My big problem is the evening munchies.........I must stop this because I'm only sabotaging all the good work I do during the day.
I must get a new all engrossing hobby.:rotfl:0 -
Today I've been so busy doing activities with my little one before school starts tomorrow.
I managed to sneak my salad into McDonald's even though I wasn't hungry, but I ate it as I knew I'd have no other time to eat until tea.
I detoured home via aldi to get some of the sausages you said about LL - they are huge! I had two for tea with nothing else as they filled me up.
We have two left over and we'll have one each in our packed lunches tomorrow with the salad.
I'm exhausted from the busy day so early to bed tonight and back to work & school tomorrow.0 -
