I'm Afraid I have fallen off the wagon this last week or so - slapped wrist time.

I have also been away on a little mini break and I am feeling refreshed so it's time to make a fresh start.

Today's menu - an omelette for brunch and roast beef with cauliflower mash, carrots and green beans for dinner.

    Fingers crossed.

Some days we are all good intentions, then life happens. I am doing reasonably well at the moment, quite focused, I will make hay while the sun shines, On that note, supposed to be getting warmer later in the week, hope better weather will be more encouraging, when it`s cold and miserable I look for comfort food.and plenty of it.

    Glad you are doing well.

Yes, the weather has been so awful hasn't it. I've just been so tired, fed up and demotivated.

My friend invited me to stay a few days. I was so low I couldn't face it and had to really force myself.

I'm so glad I went. I had a good time and feel much more cheerful now. Our little girlie get together really helped lift my spirits.

Hopefully some nice warm weather will also help. I really do need to get my act together........;)

I think I need to join you to get some help and ideas for low carb eating. I am just about to commence on Insulin (Type 2 10 years+) and I am following a strict shake diet (Exante) at the moment, but I need to eat in the evening something low carb when I use my insulin.

All this carb counting and what is good or bad completely goes over my head!

Well Dahlings this week has been a disaaaaster.:rotfl: but it was my sons registry office wedding on THirsday so that's my excuse .....

May is going to be very difficult - a week in Barcelona for the church service, lots of entertaining, my other sons 30th birthday and then the big wedding party at the end of May.

I'm not going to fret - I'll just do what I can and then get down to serious business next month. In the meantime I'll just try and make healthy choices where I can.

Hope you are all doing better than me.......:D

Gone quiet again, due to the warmer weather I have been eating a lot of salad, made up a bowl of, romaine lettuce, watercress, red onion, cucumber and tomatoes, huge serving with, using some of my cheese hoard up, chunks of, brie camembert, gorgonzola and grated cheddar over, then a generous amount of egg mayo, 6 hard boiled eggs, with enough mayo to make it creamy, about 50 grams does it, all of the above lasts about 3 days, maximum time I would keep it. Down to 10st 11lb this morning.

That salad sounds delicious Pam, I may pinch your egg mayo idea too as I have lots and lots of calories 'spare' due to not eating carbs. I have a lot of weight to lose and I am Type 2 diabetic. My doctor has given me 6 weeks to lose some weight and get my blood sugars down so I have accepted the challenge and I am looking for nice recipes and meal ideas.

Ditchthecarbs.com has lovely recipes. I'm trying their 'fathead pizza' tonight.

There is also a good uk low carb Facebook group too that have good ideas.
