p.s. I did a complete inventory of my fridge/freezer and upright freezer, with all the fresh veg I had already purchased, and what I have frozen, either raw or some pre cooked and portioned, I want to clear that away so menu planned for the week, It is supposed to go very warm end of the week and into next, so may have to turn to salads.
I find if next days meal de-frosted or pre- prepped you are more likely to stick to sensible choices.

    Hi everyone

Pamsdish - posting meals would be a great idea. I am really in a rut at the moment and am not doing too well. I have had some stomach problems - paint fumes from the decorating, so then I don't feel like cooking properly. Then of course I make my stomach worse by eating the wrong things - grain intolerant.

Plus I have my back again.

    Woe is me....:rotfl:

Anyway I have decided I need to have a break from painting and have also booked myself a Physio appt.for tomorrow. Hopefully I can get back on track. Also Back onto the IBS meds for a few days to help things settle again.

I have just done a freezer and fridge inventory and have lot of fresh veg to use up.

So today's it will be pork chops, cauliflower mash, brocolli, and carrots. I have some good sausage so will cook that up as meatballs to have courgetti tomorrow.. I have some cold chicken drumsticks left over from yesterday so they will be lunches for a couple of days.

My big problem is I get the evening munchies.....I really need to think about snacks/treats etc.

I have a wedge of Parmesan so thought I might have a go at making Parmesan crisps for nibbles.

L.L. sorry you not well, hope you pick up soon, some summer would help.
Always fancied those parmesan crisps too, that made me think, always a plus when I do, I bought a huge bag of kale so could try some kale crisps, taking dog{s] out now, walk an older, lol, friends too, separately, unsociable staff, then have to have a coffee, will be back then ready for my meal, will have a look at the kale recipe then

Think it would be nice to post our meals for a while, I do tend to eat one main meal a day, usually mid afternoon, then a snack at 7 pm , I had yesterday, 2 roast chicken thighs, cauli, brocc, and my first picking of this years beans, gravy made with all the fat and juices from chicken, with a tsp of bisto, also a generous dollop of cranberry sauce,
Later I had some frozen raspberries blitzed with double cream, makes an ice cream consistency.
I will be having ditto today, as I always plate the same veg for Monday, gravy into a mug, nuke all in microwave, meat left out to come to room temp, just because I do.
Definitely think it's a good idea to post meals, it's nice to see what others are eating, get some new ideas or a reminder of meals you haven't had for a while, it's so say to get stuck in a rut.

Tomorrows breakfast and packed lunch prepped. Cheese salad for lunch and cheese onion and tomato omelette for brekkie.
Not sure what to have for tea, should be finished work for 3 so will have see what I fancy when I get home.
Went on scales this morning, 9st 5lb, before my 2 weeks holiday I was 8st 13 so need to loose the weight I put back on, this shouldn't be too difficult, I hope.

According to my planned menu, today is chicken kiev, don`t fancy them, so will have pork chop with swede, cavolo nero, and some cauli and brocc mash..
Not sure on my snack, have cream and milk to use up, so could be a simple egg custard.

Feeling grim this morning, IBS and GERD really playing up. (Effects of paint fumes). Had to cancel my Physio appt.

I've just had cold meat, cheese and baby tomatoes for breakfast. Dinner tonight will be bolognese sauce from the freezer and courgetti.

Have some left over cauli cheese so might have that for lunch.

Didn't get round to making the Parmesan crisps so will have a go today.

Was going to go to Aldis after Physio but can't face it so will just walk down to the local Sainsburys mini market. For a few bits.

I might dig out my Paleo books this afternoon and maybe look online and try and get some new ideas.

Egg custards sound like a good idea, never occurred to me. Do you use cream or milk.

Im loving our plan to post meal plans, it's definitely helping me get some fresh ideas. I was really in a rut so thanks for that......

I've had to go back on to IBS meds and am having to be careful with what I eat but hopefully should feel better soon and then can start experimenting a bit and add more variety.

Egg custard, I make it in a largish deep bowl, glug of cream it does taste nicer, mug of milk, full fat of course, I don`t take milk in drinks so can afford the milk in carb count, squirt of hermesetas liquid, or your prefered option, beat 2 eggs up in mug, whisk into cream milk mix, times can vary in microwaves but I do 12 mins MED or 50% power. I like a soft set so either reduce or add time to your preference.

Thanks for that, nice and easy.

I love egg custards. Soothing to eat when my tummy is irritated too, just bought sime Greek yogurt , raspberries and bannas too, so plenty of healthy treats for evening munchies.

If you have some cacao I recommend adding this to the Greek yogurt, delicious with raspberries!
