I'm now missing a body organ
Slowly getting back into the land of the living after nearly a week in hospital having numerous procedures/tests/drug combinations/ and finally emergency major surgery...
4 days of nil by mouth is a hard one to now try n start eating normally again.
Ill be around when I'm back to normal xxx

Well done/good luck for jobs/interviews, this forum is brilliant for good vibes. Both hubby and son got jobs with vibes from all you wonderful people on here (well that's my reasoning and I'm sticking to it :rotfl:)
Ok first WI for challenge gained .2lbso looks like I'm starting this challenge as I finished the last. Only thing to say is it could have been worse. Son is trying to eat healthier so may help me stick to it better (fingers crossed).
Good luck for the coming week and keep the faith all :AIts not what you do but the way that you do it, thats what get results :T

Well I seem to have fallen off the waggon and I'm struggling to get back on. Went out for a meal on Friday night and told myself all day that I was going to be super good and just have a tomato based pasta. Somehow by the time we ordered the words potato skins and pizza came out instead. And wine!!! Then yesterday morning I was doing a coffee morning and the cakes jumped into my mouth. Today it's been biscuits. It's like I'm totally out of control
. Help!!!

I make a roasted veg crustless quiche as I mainly do green days. I chop up a butternut squash, courgettes, mushrooms, peppers, red onions, aubergine and garlic and roast in the oven until all the veg is soft. This makes loads and then I freeze in portions so I can make the quiche or a vegetable lasagne.
When I make the quiche I use a portion of the roasted vegetables with a tub of Mr T healthy living onion and chive cottage cheese. I use a stick blender to blend the cottage cheese so it is not so lumpy and mix in 3 eggs, then add your roasted veg and salt and pepper and mix. Spray an ovenproof dish with frylight and then pour the mixture into the dish and cook for about 20 mins on 200c. Sometimes I mix in 40g reduced fat cheddar as a HEA.
I have also made into individual quiches with the same mixture and used a muffin tin or silicone cases which are great for taking to work with salad for lunch.
If you do extra easy or original it would be nice to add ham or bacon to the quiche mixture.
