    Thanks clippy. Do you cook the potatoes and leak first or does it all cook once you put the stock in? I will give it a go next weekend after I have been shopping :)

    I paid £115 off my credit card today - the first 'over' payment I've made! Its a start!:T

    I spent £20 today listing my flat for rent for the summer - keep your fingers crossed someone wants it!

    i normally slice and wash leeks and put them in pan with a tiny bit of water on medium heat whilst i dice the potatoes to make them soft. then i chuck in the potatoes, crumble stock cube on top, add pepper and then cover with boiling water just over the contents. boil it then simmer for about 20 mins until potatoes are mushy. i love it even though its so simple :D

    Hi All,

    SFD today so that takes me to 5/15 so not too bad. Still on target for 15 by the end of the month.

    Did a bit more decluttering but not as much as I had planned. Only 1 new area decluttered but that ties me to 9/28.

    The rest of the day was a lazy day with a leisurely breakfast and a lovely roast dinner both cooked by OH :j :j

    Everything is set up for next week with all lunches and evening meals planned. Evening meals are all ready meals....homemade of course except for Friday's which will be pizza. We won't make the dough until the day :T

    Thank you so much. I must sound really stupid but I've only ever made tomato soup before and then I had a blender. I am fine cooking full meals, honest!!

    Another easy soup to make that does not need a blender is a vegetable soup. You can add literally anything you have to hand with a stock cube, herbs, seasoning and water. You can even just use water, herbs ad seasoning if you prefer not to use a stock cube. I tend to add a little butter, margarine or oil to the pan and then add the diced vegetables and sweat them off on a low heat for 5 to 10 minutes and then add the water or stock, herbs (dried or fresh) and seasoning and bring to the boil then simmer until the vegetables are tender.

    I started making vegetable soup with anything I had to hand following a holiday in Portugal when a couple of people in the group always had vegetable soup as their starter and I realised no two of them were the same. A few years later when I went back to Uni I had an organic fruit and veg box delivered each week and started to make vegetable soup with whatever was left a day or two before my next box was due. Cheap, healthy, tasty and very filling particularly with a chunk or two of home made bread :j

  • Evening all. A spendy day as predicted.


    Petrol in the car to the tune of £22.98, and £11.53 on food. Had a lazy day, tv and knitting as was feeling a little under par (too much wine last night to be honest).


    Hoping to do some exercise tomorrow. Short week this week for me as am off on Thursday and Friday whoop whoop!

    Thank you, that's brilliant. I'm excited to make soup already :) Sounds daft but thought it's be much more complicated!

    Mmm, leek and pot soup is delish and dead easy... and if you want to make it look posh (for guests) add a dollop of crème freche when you have finished cooking and stir in then put a fancy swirl of it on the top in the bowl to serve - cheap, tasty and impressive-looking!

    I still haven't replaced my swoozer hand blender but if you mash the soup with a potato masher near the end when everything is soft it gives it more of a thick smooth consistency to make a change from chunky....

    I well fancy some soup now...:) better head to bed before my stomach takes over :p

    Just a quick post haven't been on in a couple of days had to go to out of hours doc at quarter past midnight I phoned them at 7. I hate nhs 24 :mad: well turns out not just a cold and cough got a nasty chest infection, which is making my asthma worse and struggling to breath but did get steroids and antibiotics so hopefully will feel better soon.

    Will update with spends Tom but now that am taken next week off I have till 18th to get few more SFD as I will be in my bed can't even hold a conversation and struggle to breath :( Sorry for the boring post just feeling sorry for myself :o
