    Ummm it was kinda made up! So here goes.. it makes a LOT. By which I mean 4 generous frozen tubs AND 3 main meals as I took the remainder to my friends house so half this recipe if you don't want to eat it for 2 weeks...:o
    • 3 cups soaked (overnight) black beans. My Tescimo near work do these... but they are very hard to get hold off. 1KG of them is £3 but tinned you are looking at 99p a can for 400g net weight. I think they are also called turtle beans and any Tesco do them.
    • 2 onions chopped or shredded. For ease I peel and quarter my onions - into the blender they go with water to cover them - they get pulsed until they are shredded. Into a sieve to drained them, then into oil thats warming up. Cause I am too cheap to buy a food processor and too busy to chop them.
    • 2-3 carrots. Sent the same way into the blender with a little water as the onions. (Lazy cow)
    • 2 tins of Tesco EDV tinned toms.
    • Liquid Smoke.
    • Cayenne Pepper or Chilli Flakes.
    • Vegan Vegetable Stock. (about 1.5 litres)
    • 2-3 Garlic Cloves.
    So simple...onions and garlic into a massive pan to fry a little until translucent, not brown. fThey can sit in the pan with some oil while you prep the carrots.

    Carrots, pre-soacked (very important) beans and toms go into the pan with enough stock to just cover everything - not swamp it. It will have to go on a low heat and I leave it there for about an hour.

    Don't worry about it looking like a very boring soup - after a while the beans colour the water a rich chocolate brown and the carrots and onions (for flavour more than colour etc) have vanished. You don't want too much liquid as this should come out like a chilli bean consistancy.

    Towards the end, add a very generous dash of liquid smoke (ebay Colgin liquid smoke) and then a bit more. You want to actually smell it as well. Then chilli or cayenne to your taste but since it's a very large vat of beans you must add adequate salt or there is no depth to the chilli flavour. And normal black pepper.

    For a proper authentic style of beans for on taco's, or rice, or enchillada's use a hand blender to pulse a few times right into the middle of the beans while it's still hot. This makes the ummami density, less "beany" and more appetising to children and less like you have just cooked a heap of beans. Although don't do it too much or you will end up with pate. Pulse it once, stir to check your hand blender hasn't the power of ten, then again to make an equal part beans to mush - then stir. Hmmmmmmmm!

    On the side I add a pineapple (Tesco EDV 36p for 540g) mixed with fresh crushed garlic, corriander and chilli flacks or fresh chopped red chilli for a jazz of colour. Very Barbadian/Jamacian apparently
    1. Add brown rice underneath and pineapple salsa on the side hey presto.
    2. Or add on top of nachos, with salad on the beans and cheese on top of that - that's called a Haystack according to the Americans and a treat for us kids when we were growing up... check this out...
    3. Or wrap inside brown seeded wraps with the rice, put in a large pyrex dish side by side, cover in your choice of cheese and grill..

    Mmmmmmmm that soup recipe sounds yum!

    I've just got back from being drilled at the dentist and no food for 2 hours and by all accounts nothing hard to eat for 24 hours (on the side of the filling!)!!! Soup it is for me then!!!

    Re-looked at my budget (which I always find therapeutic) and am on track to clear my debt and will have saved £1000 EF by the end of the year! That's a relief as I was sure I was really behind after xmas!

    Not going to be a SFD <again> but hopefully tomorrow!!!

    I made the black daal from Rick Steins india book and it looked like a pot of black beans in black sludge. It looked disgusting so put me off! Would I have been better if I had blended it! I followed the recipe exactly but think I should have rinsed the beans once I had cooked them (recipe said not to). Meant the water was black goo which dyed everything! :( you can get the black beans in Mr s as well, think were £1.20 for 500g. I have some left so will try this as it sounds yum :)

    Can't believe I missed posting yesterday Anyway no SFDs to report - yesterday I had to do a PAH trip to stock up on cat food for whilst we're away on holiday and tonight Harley Kitten is off to the vets with a swolen lip..well it's been a couple of weeks since our last visit, we were probably due a trip anyway ;)

    I'm beginning to think these cats are more expensive than kids you know :D
  • Abundant - it's NOT soup! That's not what you aim for! Lol!

    Clippy - black beans will turn everything a dark colour. Defo don't blend it.. it's different (from what I see) from red lentil dahl which is almost soup like. Maybe try this as it was adapted from his recipe and what mine looks like although I don't blend mine into oblivion - there are still beans to be seen.

    Just read that link from Jack Monroe. I like her a lot. So Jack if you every manage to read this or know who we are you have a multitude of supporters right here. Can't believe she is getting death threats... Pass it on people or like it on your FB page.. I am going to watch the re-run of that programme tomorrow evening...

    Afternoon, spend day today. We are going to a swim party at the weekend and DD doesn't actually have a swimming costume!
    So I have had to order her one.
    Hoping that the rest of the week will be SFD as I am working the next 4 nights and then Sunday will be vegetating so will be onesie sunday haha!
