I can well imagine how awkward that must have been when someone starts acting strangely at a large event, and sympathise with the urge to say a flippant remark to lighten the mood which you later regret. I don't think you sound rude at all, just a bit.. tactless which you admit, there wasn't any malice in what you did. AND you apologised.
I think you've learn however that its probably best you let your BIL have his space and that he'll probably be better company if that doesn't feel "threatened" by having people all over his nice clean house. Next year/occasion perhaps stay in a local hotel and only go for dinner, or go to your sisters for dinner, or invite them to stay with you. It probably just all got to much for him and he flipped a bit, I;ve done that too, and probably knew your comment had elements of truth which is why it upset him. Try and forget about it, it will fade over time and there isn't anything you can do to change what happened now.
