The wonderful Jack Monroe posted this earlier:

I’ve had a hankering for Curried eggs for the past couple of days, I’m not sure why… So tonight, I knocked this one together. Rich and simple, cheap and easy, this is set to become a Major favourite in my household…

    Ingredients: (Serves 2 at 90p a portion)

    4 eggs, 88p
    1 onion, 9p
    1 tbsp oil, 3p
1 fresh red chilli or pinch of dried chilli flakes, 9p
    2 tsp turmeric, 6p
    2 tsp cumin, 6p
    400g chopped tomatoes, 35p
100g frozen or fresh spinach, 15p
100g natural or Greek yoghurt, 9p

First, pop a pan of water on to the boil for the eggs, and carefully drop them in. Bring to the boil, then reduce to a simmer for 8 minutes to hard boil them. We’ll come back to those in a minute.
In a separate pan, add the oil and spices, and dice or slice the onion according to preference. Cook on a medium heat for a few minutes to soften the onions.
Carefully remove the eggs from the pan when they are done, and set to one side. Add the rice to the ‘egg water’ – saves you boiling another pot!
Pour the chopped tomatoes over the now-spicy onions, and add the frozen spinach. Bring to the boil, then reduce the heat and leave to simmer while the rice cooks. (To save energy, you can turn the heat off and cover with foil, a lid or a large plate – the curry sauce will carry on cooking itself but will need a quick blast of heat again before serving.)
Peel and halve the eggs and add to the sauce with the yoghurt, stir in, heat through, and serve with rice. Mango chutney is a great addition to this dish too – I just don’t have any in the fridge. Booooo.

I reckon using fat free yoghurt and subbing frylight for oil would make this more than half superfree before the rice?

A tasty MSE light meal :money:

Not too bad today, lots of body magic rushing around and a work errand that gave me two extra half hour power walks!

Breakfast - Mushroom, tomato and onion omelette/hash (1 egg and some HEXA milk) on 2 x HEXB toast

Snack - Pineapple, kiwi, muller light

Dinner - Tuna pasta salad (1) and superfart soup

Tea - Trimmed pork steak, SW chips, carrots, broccoli and an alpen light (4?)

Supper - Some savoury rice and an apple and an options (2)

Eaten more than usual but moved around more than usual too and I *think* I have kept my 1/3 superfree just about.

  • Hi all, sorry been AWOL for a while but LO has now decided not to sleep at nights :-(

I have seriously dropped off the wagon - didn't go this week due to meal out for FILs birthday & everything has gone completely downhill with several meals out, several meals at friends or family & takeaways

I can't get back into the swing of things - no motivation at all - being tired has caused me to be lazy & crave sugar - especially as trying to limit my caffeine intake because of breast feeding!

I feel stupid for buying a 12 week countdown & becoming part of the furniture in group - I don't think I should be there - I love going but I feel a fraud as I'm not gaining massively because I'm breast feeding but I'm not following any type of plan!

It's so hard when I'm visiting people & they cook for me or if I go out & am hungry in a coffee shop or at home & LO doesn't settle so reach for something quick! I've got so used to eating cold food now that I feel that I needn't bother cooking anymore!

Anyone that has small children that is managing ok I am in awe of you - I just can't do it

Sorry for the rant - I just feel strange being so out of control - I don't normally get like this!

I have tried to read back but can't remember everything :-/

Hugs Mildred - haven't read back far enough to know everything but I'm thinking of ya x

Well done to you losers - that chart looks fab with some fantastic loses - I'm so jealous x

Start frying off the leeks until starting to soften, then add the mushrooms. Season to taste. Once almost cooked stir through the creme fraiche. Enjoy!

Sorry to be so dense. Can I fry the leeks from frozen?
Well week 1 loss was 3.5lbs, think that I need to read and re-read again.
:T that's brilliant. I knew you'd have a loss. And :T to all other losers too.

Sorry you're struggling at the moment nessie. Take beanie's good advice and keep plodding on. It will get easier with the LO in time and you're being so sensible tackling your weight now rather than waiting years like many people do.:o I know Mrs Macawber has bought in a few ready meals so she can eat quickly, makes a change from cold food. Have a hug.:A

Nessie - do not feel a fraud for going to group!
Maybe look at as a little baby free time for you to be Nessie and not Nessie mum of R?
I'm in awe of you going to sw I truly am xxx
The eating of cold food thing is one that 22 months down the line I'm still quite happy to eat a cool meal:)
You have paid for membership it is up to you how often you attend if you want to x
I think most babies regress a bit with sleep at 4 months Ish?

My advice would be do what's best for you (and baby) and suit yourself no one else matters not does their opinions or advice

My dd seldom sleeps through but its now just her can't stand people who try to tell me what to do - yes I've read so many theories yes I've tried numerous sleep approaches and none of them work for us so no sorry that my dds wake ups effect precisely no one except me :@ opinions are like trumps everyone thinks theirs is the best :@

Thank you for all the hugs xxx I'm doing alright - need to stop googling though :/
Started sw 02/09/13 - total loss so far -5st 1lb

You can get 0% fat free greek yoghurt from Mr Ts - I find it's a much nicer texture that the Total 0%.

It sounds a fairly easy recipe - will add that to my meal folder to use at a later date.

Sorry Maman I've no idea as I've always used fresh. I only use frozen leeks for soup or casseroles!
