  • Day 3 done for me! :j

I made a yummy chicken and tomato pasta with peppers, oregano and chillies. I took far too much too, so there's half of it left in the fridge at work for tomorrow! :D

A Turkey Salad with some reduced Red Pepper & Chilli Cottage Cheese was lunch for me today.
I am making the effort to make the meals, but I must remember to take cutlery! I had to borrow a spoon today for my yoghurt.

I have some mince to use, very tempted to do a slow cooked chilli, thanks for the inspiration

Fliparoo, it may be worth buying small pack of plastic cutlery and leave it in a drawer at your desk/in your car (where ever you need it).

    Nothing exciting again from me!

Banana, apple and nuts for breakfast
Pickle salad sandwich. I made brown bread yesterday as I was fed up trying to cut the very light white. Really need to get my bread knife sharpened.

    Day off tomorrow! Yippee!!

Here to declare day2/16. Took some more of chunky broth for lunch. Not as exciting as yesterday's as my dad had decided to chuck the spinach out. Must have been looking a bit past it but annoying all the same as I didn't realise until this morning.

Should be good again tomorrow...OH is making big batch of pasta for tea so taking leftovers

No problem at all! This mix makes around 12 small muffins.

Hunk of cooking chorizo, chopped into cubes and fried (Lidl's chorizo is very good for this)
    190g Cheddar cheese, grated
    75g butter
    1 egg
    250ml milk
    300g self-raising flour
1/2 tsp paprika (I often used hot smoked to add extra flavour)
    pinch of salt

Preheat the oven to 190 degrees, and lightly grease a muffin tin.

Cut the butter into pieces. Mix the egg with the milk.

Sieve the flour, paprika and salt into a large mixing bowl, then rub the butter into the flour iuntil it resembles breadcrumbs.

Add the ham and the cheese to the mixing bowl, then pour in the egg and milk mixture. Mix thoroughly.

Spoon into the muffin tin and cook for 20 minutes, then leave on a wire rack to cool. :T

I must get round to cooking these tonight, as despite my best laid plans I got completely distracted by watching old episodes of Parks and Recreation with Mr Pinot! Nevertheless, this thread has spurred me on and I now have another 2 days of lunches to report - more hm roasted tomato soup and cucumber sticks for yesterday and leftover sausage squish squash and rice for today.

Currently on track with 3/18 days completed for #16
:T I'll try them on Sunday after I have been shopping. They sound just my type of thing.

Day 4 completed here. I had turkey wrap for lunch, I bet you couldn't have guessed :rotfl:

    Hi all

    Day 4/16 completed - #53

I don't have much left in the fridge at the moment but I'm going to have toast with cheese and tomato tomorrow. The vending machine lady left some slightly out of date crisps sitting beside the machine so I nabbed a pack:D

Failed today. My car broke last night so I had to take that to be mended, and then I had to take my dad to hospital, so with all that going on I didn't have time to make sandwiches. Would have been able to take a tin of soup, but work microwave is still broken.

Thanks for letting me know! What's B&M? And do they have them in Scotland?!
Guess what? My headache is back again! I'm sick of it :( I've had 2 teas today, I'm going to drink a pint of water incase it's dehydration but I'm fed up of these blummin headaches!

B&M is a discount store.. Not sure about Scotland though but they are increasing and seem to be springing up everywhere.

So sorry that you are still suffering though... That must be utterly miserable. Could it be eye strain or something like that?

Good afternoon everyone! Updates and adds have been done up to here :)

Day 5 for me today..and guess what i took? Betcha can't! I took falafel and salad in a pitta! :rotfl: I am really going to have to make something else for tomorrow. Maybe i'll have some tomato soup and bread roll instead :)

I'd you enjoy your falafel then keep having it. It is healthy afterall.

Day 4\22 for me today. I took HM carrot and corriander soup with HM bread, a small slice of stollen, one slice of Mr Kipling cake, a satsuma and an apple oh and a few pretzels.
[Sorry if the text is a bit small. I struggle to get it right on my tablet]

Have the same again for tomorrow and then will think of something else.

This thread is huge this month and that's great to see.:T
