  • Today in my Abel & Cole small Fruit and Veg box I have:
    • Onions
    • Potatos
    • Celeriac
    • Carrots
    • Cabbage
    • Bananas
    • Apples
    • Satsumas
    As extras I ordered:
    • Cherry Tomatoes
    • Cucumber
    • Oak Leaf Lettuce
    • Red Pepper
Tonight we're having Chickpea and Potato curry. Tomarrow I'll be doing a Potato and Celeriac gratin with carrots, cabbage and some leftover sprouts.

Bananas, apples and satsumas will be eaten as they are for lunches and snacks although we have a LOT of orange citrus so I need to do something with them or they will go to waste. Maybe an orange upside down pudding or similar. Salad items are also for lunches.

Overall we really do need to up our fruit and veg intake as I'd ordered a larger box for Christmas as we were off work and had visitors. In reality we've chosen to eat junk instead and I have Pumpkin, Squash, Turnips, Sprouts and lots of carrots left over.

I must start making more use of the contents of my veg box - I've just had to do a clear-out of the veg drawer, which had the last bits from my last one, before Christmas, which had almost all gone off: half a pak choi, the centre of a savoy cabbage, and a lettuce - the celeriac was still OK which was a pity in a way as I got another one today. :o

Tonight I'm doing root veg mash to go with a casserole, which should use up part of the original celeriac. I've still got a couple of squashes sitting around which I received weeks ago, so I must find a use for those - I might do a batch of soup, but has anyone got any other bright ideas as I've got two to eat?
Back after a very long break!

This might be an acquired taste but I think pumpkins and winter squash make lovely pasta sauces. I make what would be enough cheese sauce for a third or half of the pasta and replace the rest with roasted, salted pureed squash. You won't think it's all cheese sauce but I actually think it's nicer this way. And it's easy to just use half of one for this as you can roast the other half at the same time for soup.

I ought to do this tomorrow - my table of pumpkins is looking a little unseasonal sitting next to the christmas tree!

I do find it frustrating that the thread has been merged with another that is different, I had read through the meal planning threads and the other veg box ones and felt this new thread had greater relevance.

Anyway sorry I have been mia, with all the holiday excitement I have been away for a number of days and as a result eating unhealthily :o. However my veg box is coming tomorrow and I will be getting back on track :D.

Looking froward to planning with you soon!

Stuffed squash is lovely whether you fill it with a meat or veg type stuffing. I also like having it roasted as an accompaniment to meals.

I have my first Abel and Cole box of the year due on Friday. I did alternate between them and Riverford for most of last year. Due to tightening budgets I stopped them in September but have been so disappointed with my veg from the supermarkets, plus we aren't eating nearly enough veg (I find if I get a box we usually eat it all and don't waste anything as it is quite expensive). Looking forward to receiving it, have also ordered some extra squash to make up some veggie soup for lunches :)

Apart from Abel and Cole and Riverford does anybody know of any others which cover Hampshire?

    Thanks in advance :)
