    My first fruit and veg box of 2012! Just back from a few days away and it was sitting all wrapped and waiting for me :D.

    Veggies
    Leeks
    White cabbage
    Carrots
    Parsnips
    Mushrooms
    Spinach
    Kale
    Onions
    Red pepper
    Squash (2)
    Courgettes
    Turnip

    Fruit
    Oranges
    Apples
    Kiwi

    I have been eating so unhealthily for the last few weeks that it will be lovely to finally eat some delicious fruit and vegetables. There is a recipes book that I got out the library Cooking with Wholefoods that is filled with delicious healthy recipes and I am really keen to try some.

    Ok thoughts of how to use my box contents this week:

    • Chinese veggie stirfry
    • Courgette fritters (book)
    • Frittata
    • Squash lasagna
    • Caramelized onion tart (book)
    • Poached winter fruit
    • Root Veggie pie
    • Rissotto (not sure which type yet!)
    Quite sure I will also whip up a giant pot or two of delicious soup :). What are you all planning?

    I've been Money Tipped!
    This weeks organic box contained:-
    Carrots
    Cosmos Potatoes
    January King cabbage (a fine specimen)
    Leeks
    Mushrooms
    Oranges
    Conference Pears
    Bananas

    So on the meal plan is:-
    Prawn Stirfry - (mushrooms, carrots & cabbage)
    Beef Stew - (leeks, potatoes and carrots)
    Leek and potato soup - (Leeks and potatoes)
    Roast dinner - (Carrots and cabbage)
    Fruit salad - (Pears, orange segments and bananas)
    Our days are happier when we give people a bit of our heart rather than a piece of our mind.

    We made paella today using the pepper, onions and garlic it was very tasty.

    Now I need to find a new apple thing tp make as I am becoming over run with them again :eek:

    If you're interested and phone them up they will make a basket up to your individual requirements,I met them at the Good Food show in the SECC this year,I like that the fruit n veg is delivered in baskets,i just keep it on top of the fridge and anything that doesnt need to be stored in the fridge gets stored in the basket, it then gets exchanged for a full one at the next delivery,
    Today i used up celery,carrots,onion and potatoes all diced in a corned beef pie(recipe from the hairy bikers PIE book that youngest got me for christmas)
    Tomorrow im planning on having roasted butternut squash with salmon
    Im gonna half the squashes lengthways,then once roasted scoop out the flesh,mix with mozzarella cheese and black pepper,put back in the squash "shell" and re-bake for a few more minutes,not sure what it will taste like,but ive got 3 large squashes to use,so this will take care of 2 of them...ive actualy still got quite a lot of veg needing used up before my next delivery on Tuesday.

  • Mummyjane - try Sunnyfields for Hampshire, they have a website and you can order box and top it up leave bits out etc. They attend most of the farmer markets and are very good.

    Update,The roasted butternut squash went down a treat with 3 out of 4 of us..(youngest isnt very adventurous when it comes to veg!)
    I halved them,scooped out the seeds..roasted in halogen oven for around 30mins,(no oil)fluffed up all the soft inside with a fork,then added broken up bits of reduced fat Mozzarella,sprinkled crushed black pepper and a sweet chilli garlic mix,then some snipped chives,back in the oven for another 5 mins, delicious and very filling,served them with some small salmon fillets...made a welcome change from potatoes in any way shape or form.Still waiting on my Meat Free Monday book for other ideas..more looking forward to my next Veg delivery on Tues now.
    Veg soup in slow cooker today to use up some of the sadder looking veg.

    I found a bit of thyme or rosemary (even both if you have them) turns roast squash of any sort into a gourmet meal.

    VEG

    huge savoy cabbage,
    leeks,
    mushrooms,

    galia melon.

    And my book arrived yesterday,so will do some meal planning later.
