Hi all,
Very daft question but... I want to freeze vegetables that I don't use immediately, rather than throw them away.
I tried once with cut up sweet potatoes but they went all brown once I froze them.
I read that you have to par-boil veg first.
So should I boil the veg for 5 mins and then let them cool, then freeze?

Hello everyone,
I have just roasted a surplus of veg...courgettes, peppers, aubergine,tomatoes, but is it now possible to freeze them successfully?

yes I suppose so - my local farm shop sells these (par roasted) as a mixture for cooking from frozen. Theirs are 'loose' so I suppose you would have to open freeze before you put into a bag for storage.
If you don't think they would survive re-roasting, I suppose you could mush/ blitz them a bit before freezing for use as a pasta sauce maybe?0 -
Thanks Angie, what a great idea to blitz for pasta sauce :T They are fairly mushy already. I will freeze a small amount as they are, just to see if they do freeze well.

Just been given a food processor by FIL which has lots of tools for slicing and chopping. I am planning to scour the supermarkets late for the reduced veg and wonder if I can freeze them. Is there anythin g special to do to the veg before freezing?2013

blanch it!! Bung it in boiling water for 1 minute take it out and bung it into cold water. I'm not exactly sure why, but I think its to retain colour and texture.
