I freeze all veg
Today I froze brussels, carrots and parsnips, all left over from Christmas, I don't bother with blanching either just portion them up into bags and put them in the freezer - never had a problem with them tasting different, maybe the carrots had gone slightly off before you popped them in the freezer, I always find the pre cut/ packed veg have a funny taste anyway but that may well just be me.
Mushrooms are good for freezing too, ideal for casseroles and curries etc etc.G.C July £21.09/£1000 -

Emstick14 I've never had any problems with mine, they always taste fine and believe me if they had the slightest odd twang to them my DS would notice as he is funny with food.G.C July £21.09/£1000

We have got an allotment as well, so we freeze all sorts of veg. Never had any problems with carrots before. There might have been something added in the pre cut bag to keep them fresh. I find that parsnips do tend to discolour but they taste fine. I find they roast better if you defrost first. I just run them under cold water first and dry them.
Cabbage I find is best shreded then just add and handfull to hot water and simmer.
If we did not have the lottie I would buy the reduced veg all the time to freeze.0 -
I don't bother blanching.
My carrots, cabbage broc, peppers, leeks all come out fine including spuds as long as they are coated in oil.Ds2 born 3/4/12 8lbs 8.5:j
