The freezers are heaving - I've now done 84 cakes/traybakes with all my spare eggs - all frozen and just need the toppings or fillings when defrosted. So no need for biscuits or I can use them as puddings with custard. Used pieces of gingerbread from a traybake and defrosted some HM orange curd to use as the sauce- lovely.

Wow that must make your diet difficult?! I'd be hopeless with that many cakes in the freezer!!

Frittata/spanish omelette might portion/freeze ok for easy meals?
Omg I am feeling a bit bad, went into Mr s, my bill was £1.61 for some sultanas, Greek yogurt and some pittas, I had £1.65 , I put all the money in or so I thought, the machine oddly registered £1.20 even though I had 3 5ps 1 50p and £1 coin, so I told the guy what happened and he gave me my 4p change, got home only to find the 50p in my pocket! Ooooops! Next time I go I might say sorry and give back the 50p.

Rofl made me laugh, I'd feel mortified if I got home and realised!

Used the last of my free veg from Tesco campaign to make parsnip and carrot soup. Kind of lucky don't have a waitrose in town or whole foods plus alot of these veg boxes don't deliver in Scotland .makes temptation less :)

Don't you have some lovely local farms delivering instead up there? I can go in most supermarkes and not see hardly anything I want to buy yet go in WF and could spend a fortune!

I did nip into Waitrose as I was passing, needed granola/yog, got the new Kitchen mag, some nice recipes and like the look of the new Middle Eastern ingredients they are doing, I hadn't been able to get dukkah since Sainsbury's stopped doing it so good to see that back in a mainstream supermarket as it goes well with my split pea dip and bread. Like the look of the pot of rose petals too!

I'm really trying to make meals out of 'nothing' using mostly dried wholefoods in the cupboard, some frozen HG stuff and fresh weekly veg deliveries. Rough meal plan over next couple of weeks is:

Split peas/bread flour - will make into dip & bread
Puy lentils - will make up with dressing and veg
Gram flour - will turn into pancakes with veg/potato filling
Chickpeas - will make into tagine with root veg
Frozen hm basil pesto/bread flour - will make pizza base with veg topping
Paella rice/frozen courgette - risotto with added garlic/mushrooms
Still have 3 of the veggie pies I made - will have with veg
Got 4 jacket potatoes left - might do with garlic mushrooms

    [STRIKE]a higgidy pie[/STRIKE]
    [STRIKE]2 vegetarian curries[/STRIKE]
    Chestnut rissoles
    Quorn mince

Turned some of the bread into breadcrumbs this week and I have made 18 chestnut rissoles.

The tofu has been used in a green thai curry for tomorrow.

Pastry used for coconut tarts and jam tarts.

I have to confess that I have purchased the quorn mince today. My excuse for that is that I have two houseguests who arrived in the early hours and I think they might like this in a meal this week but no idea what to make with it. I've also bought tomatoes which they like and I don't. Maybe some sort of cottage pie with onions and peas and serve with tomatoes. Perhaps I should have bought some dressing for a salad - also have too much cucumber.

New freezer ordered but no delivery date as yet.

    In to freezer - nothing.
Out of freezer - plain flour + HM egg/bacon pie.
There is a little bit of space in the chest freezer!
I thought Mr F got breaded chicken out of the freezer - it turned out to be fish. So we had breaded fish + HM wedges + leeks + carrots for dinner.

  • bought some frozen chips, icecream, bread and veggie haggis at the weekend that went into the freezer.

made a jam rolypoly yesterday that used up some veggie suet and started a jar of apricot and ginger jam i made last year - it was really nice so will def do that again.

mentioned this thread to Dh yesterday as we went poundstretcher just to buy a drying/airing rack for £20 and came out £65 lighter because they had loo roll, washing powder etc all really cheap so he said we should stock up. then when we got home he said we didnt really need any of that did we we only got it because we saw it and it was cheap.

i told him that i wanted to try and run the freezer down using this thread and the grocery challenge and spend as little as poss so when we do see bargians and NEED to stock up we have the saved money put by and space in the freezer to store the stuff instead of having to cram it in and play freezer tetris then because we dont know whats in there we end up buying more of the same.
i think he had his light bulb moment.

tonight is hm leek and pot soup followed by the lo rolypoly.

Had to get baking bits yesterday and picked up YS veggie bakes for £1 and a Pizza Express pizza for £2 so they're in the freezer.

We've done really well with using stores over the weekend.

Tonight I think we'll have pasta and sauce, but I kinda want to keep that for Wednesday as I'm out at a meeting at 6 and will want something quick and filling when I get back, so will see.

Also out tomorrow night, but OH is having L/o Chilli.

Stripped down the 2 ready cooked chickens that I got on Saturday and made stock with the bones (which also went into the freezer). Plus some mac n cheese that I got home from work went in as well - not doing to well am I? Lol :rotfl:

Took out 2 huge wholemeal buns for my sons packed lunch for the next 2 days
