Eating out of the freezer and cupboards challenge - part two

    Awol yesterday as I was away seeing friends overnight so nothing in or out of my stores.
    Today
    In: french & runner beans from the garden
    Out: baked beans, chicken thighs

    Used up: cherries
  • Out: A chicken rice dish, a tiger baton

    In: some blackberries

    I made a big batch of soup with the early squashes from the garden, but there's no room in the freezer so some is in the fridge and the rest will go in the freezer at work!
  • Will be so pleased to NOT eat out of cupboards and freezers soon. Still plenty in stock but cannot reach to bottom shelves and have to wait for my children to visit and ask them to get some of the other foods out. Have h/m soup and freezer "mush" foods - mince with whatever which can turn into chilli/shepherd pie/curry etc with dried/tinned/frozen extras, ditto chicken "mush". Still got a lot in freezers but thats because I loaded them up before hospital. Well planned in advance. Another couple of weeks before I will be able to drive and go shopping etc.

    Hi, not posted for a while as really, it's just been the usual:-


    Food for free (locally or garden) still being collected. One freezer drawer is heavy of it all.


    "Old" herbs and spices being sorted out still. Looked up other uses for them. Some have been composted, tried cardamon tea (not keen) and sprouting fenugreek attempt (didn't work so put in the garden soil to see if it does).



    Online food grocery order arrives but very often item(s) not sent (not in stock). Local shopping not much acquired.

  • I've got a piece of beef which has been in the freezer for quite a while and i'm wanting to do a family roast at the weekend, and I think I might try and marinate the beef a bit in case it's a bit tough or dry. I'm thinking olive oil but I'd really appreciate any tips on anything else to put in with it - herbs or red wine maybe? Thanks :)

    chocolate cake mix and scone mix - freebies from cashback sites been in cupboard for at least a year!!! kept kids happy and another day of FREE activities yippee

    6x lamb kebab things - usually cook them all up and let family pick at them but decided that they serve better frozen rather

    Re marinating beef my favourite marinade is red wine, sliced garlic, thyme, few black peppercorns and a bayleaf. Marinade for 24 hours, remove and pat dry rub with a little dijon mustard and flour. Brown in a hot pan then transfer to a roasting dish - spread the LO marinade (minus the garlic, peppercorns & bayleaf) over the beef and roast or slow cook as you like. If unsure of the cut/tenderness I'd be inclined to either slow cook or roast uncovered in a hot oven for 15 mins per 1lb.(I like mine rareish) If roasting once cooked wrap in foil, pop ina warm place covered with a towel and rest for at least 20 mins.


    Grocery delivery today so into freezer/cupboards: Potato croquettes, pitta bread, tea bags, tinned tuna, meat paste
    Out: portion potato croquettes, southern fried chicken drumsticks
    Used up: Jarlsberg cheese, cucumber, roasted 1kg+ homegrown toms
