Eating out of the freezer and cupboards challenge - part two

  • Suffolk - try this:

    Braised Cabbage with Red Beans & Rice


    2tbs olive oil
    1 onion chopped
    1 carrot chopped
    ½ green cabbage (or white!!)
    1 litre veg stock
    4oz arborio rice
    1 tin drained kidney beans
    salt & pepper to taste


    Method

    In a large stockpot, heat oil over medium low heat. Add onion and carrot, cook until softened (about 10 minutes)
    Add cabbage and about ¼ of the stock, stir to combine. Cover and cook on med-low heat for 20 minutes, stirring a few times
    Add remaining stock and bring to a boil over high heat
    Add rice, salt and pepper. Reduce heat to med-low and cook for 15-20 mins until rice is tender
    Add beans and cook, uncovered for approx 5 mins until heated through – stir occasionally.

    It's really nice - serve with cranberry sauce if you have it ;)

    I'm sorry for being largely absent recently. A lot has come in but a lot has gone out and I am making smarter decision and for the first time in a long time my freezer was actually looking quite bare before the food delivery came this morning so I was very proud of that.

    I've been a lot better at using up things and keeping an eye on things but this month needs careful watching as between today's payday and the next payday is basically 5 weeks so things will be tight budget wise so I must make sure we plan properly.

    As predicted all beef and plums cooked yesterday now portioned and back in freezer, the difference being to other times - it's well labelled.
    Fire lit again, its oven just starting to get warm, maybe have to wait about an hour before I can put today's casseroles in it.

    OUT turkey leg, 2 x turkey wings and thigh. Loads of frozen apple pieces, to make into crumbles and pies.

    Managed to get the temp up to 22C in kitchen/living room in the evening, rest of house was 13C. This AM kitchen/living was 15C so not too bad.
    Central heater boiler ordered, delivery next week.

    Suffolk lass - When I had a lot of raw cabbage and vinegar some time ago, I used some of it to make pickled cabbage. Don't have the recipe but it was simplistic so not time consuming.

    Thanks squirrel girl and dannie, much appreciated. Not sure how I've ended up with 3 just 5 days before going away. I think I will try the pickled cabbage first as it will keep in jars - I will try adding some caraway seeds so it has a hint of sauerkraut but I shall come back to the risotto. I really like the sound of that too

    Hi all, i'll try to post more often, lots in and out but two tubs of chilli last night used for taco filling.

    Tomorrows meal plan is Fishless Fingers, chips and peas. I have frozen sweet potato fries still, but think that'll be them gone tomorrow ... Plus plenty of buttered bread :p.

    Tonight, daughter will have pizza bought for pennies at end of the shift in work on Friday. Not sure what i will have ... something on the hop as i get in at about 7.15

    I was very proud on Friday as I used up the leftover Veggie Cottage pie portions in the freezer.

    Have some soon-to-be-bad parsnips so made make a rosti or something tomorrow.

    In- Chicken stock, loaf
    Out: Beef stock pot, small piece of topside of beef
    Use up: roll mop herring,savoy cabbage

    Any good recipes for cabbage-based meals please team?

    No recipes but on another thread someone stood the base of cabbages in water and it kept them fresh for several weeks, they also did it with leeks.

    I do it when I buy Brussels sprouts on the stem, and am about to use a spare bucket to store the roots of my remaining curly kale plants which I need to dig up from the vegetable patch. I need the space where they're growing to sow this season's seeds. it works well. I just store the bucket in a shady place outside near the kitchen door
