    I used up an OOD bread mix for chilli bread yesterday and I'll be honest it was not a success. It didn't rise properly so came out a bit dense and soggy in the middle. Bleurgh. We ate most of it anyway with some cheese and salad for tea but there are a couple of slices left that I'm going to need to use tomorrow. I reckon that embracing the sogginess and using it for eggy bread might be the way forward. If anyone can think of a better way of rescuing it then please let me know!

    Croutons to add to soup or a salad perhaps or leave to become stale and turn into breadcrumbs for burgers, patties, fishcakes or to top a Mac N Cheese.

    I think the problem with out of date bread mix is that yeast has a finite life and even if the rest of the mixture is ok the yeast will have lost its efficasity. We make bread regularly with a tinned yeast and notice that by the time we!re getting to the bottom of the tin, the bread is not always rising quite so well.

    You are right about the yeast degrading if tinned yeast or bread-mixes, where the yeast is more open to the air and will degrade, but I have a supply of out-of-date fast yeast sachets that are doing OK - I think maybe the foil-lined sachets help keep them for longer.

    It might be worth considering these (I buy the catering packs). They don't go more than a couple or three months out of date normally, but you have made me think now, as I have not made bread for a month since being on my low carb low sugar 8-week diet

    Out - 2 leeks, 1 cauliflower, some cheese, butter, milk, flour for tonight's leek and cauliflower au gratin
    1 leek, 3 carrots, 3 potatoes and 3 pieces of shin of beef with some veg stock - in the casserole in the slow oven for tomorrow night's dinner
