  • They came out more like rock cakes than cookies, I also reduced the amount of sugar in them to 40g. Personally I didn't like them but DS thought they were yummy so will definitely be making again as they are fairly healthy as far as cakes go.

    looking forward to hearing the verdict on the cake, I always substitute golden syrup for honey if its only a tablespoon or so required as honey is better for you.

    It was 2 tbls ? Hopefully it tastes good, they've come out the oven and look good? ;) I'll wait till they cool and put on the frosting I made and let you know :D

    And as for the cookies I was thinking of the kids packed lunches for a treat in there (i certainly wasn't thinking of eating anything that healthy as my treat :rotfl:)

    :rotfl: I think that's why I didn't like them. I am sure if someone else had made them I would have thought they were ok. Its just I knew they were made with wholemeal flour and thats just not right :rotfl:

    Wegle do you have a recipe for those pasties? I hate cheese and marmite :p but everyone else in the family loves both! Be a nice treat :)

    I don't I'm afraid I was just going to wing it. Basic idea in my head is.

    * Chop up a couple of potatoes and boil for a bit until soft.
    * Chop one onion and add to the potato.
    * Grate as much cheese as I think looks about right and add that to the mix.
    * Cut out as many rounds of the size I like out of the pastry as I can.
    * Heat a couple of tablespoons of marmite in a pan so it's a little bit runny, maybe add a bit of water if it isn't runnifying
    * Use my pastry brush to paint the pastry rounds with marmite
    * Slap a dollop of cheesy onion potato mix in the middle
    * Brush beaten egg round the edges and bring up into a pasty shape.
    * Brush outside of pasty with beaten egg.
    * Shove in oven around 200Cish and bake until golden brown.

    That's the rough plan anyway. I don't actually think I have an onion though so might use frozen leeks instead!

    Also thinking of making my own butter and buttermilk scones this weekend. I've got tub of double cream in the fridge which won't get used before it goes bad so I think this could be fun. Never made butter before, but by all accounts it's pretty easy.

    So cheese pasties and buttermilk cheese scones with homemade butter. Sounds like a nice weekend to me!!

    You can make butter in a jam jar I've heard - it will be some good exercise - you just shake it up and down - i think it's all about getting a different sounding 'slosh' that signals it starting to become butter!!!!!!!!

    I've always wanted to try making my own feta because we eat so much of it - they even sell the rennet at my local wa!trose!!!!!!

    Yes you can, I remember making it at school like that, it was in the days when milk came with cream on the top :o we all had to take in the tops of the milk to make it with.

  • I'm finally on the laptop to post the link to the recipe I used and a pic :)

    It came out quite nice, very fluffy and the fudgy frosting was delicious! I think I prefer butter to the virgin olive oil though (it said to use sunflower oil but we had none) we also had no Golden Syrup so I used 2 tbls of Manuka Honey (all I had in!) so it's kinda healthy :p

  • virgin olive oil and manuka honey, that is one posh cake. It looks lovely might try that recipe in the week. I always use rapeseed oil in cakes just because thats what we have and I'm not buying separate oil for cakes!

    I have got a mincemeat cake in the oven http://allrecipes.co.uk/recipe/24613/easy-mincemeat-fruit-cake.aspx I don't like 'proper' fruit cakes so thought I would give this a try instead. I boiled the sultanas in orange juice and water (till they went plump) before adding.
