Scone recipe!! Makes the lightest, loveliest scones and we love coming up with new flavours - chocolate orange wasn't bad!
8oz self raising flour (don't buy cheap flour - it does make a difference)
2oz cold butter (feel this out - you often need a little more)
Grated cheese OR 1oz sugar plus dried fruit of choice
Milk
Egg
Pinch of salt
Sieve flour and pinch of salt.
Cut up butter and rub into flour until consistency of breadcrumbs.
Add cheese OR sugar and dried fruit.
Add enough milk to form dough (add any flavoring at this point also).
Pat onto floured surface until a little deeper than the depth of a butter knife and cut with fluted cutter. Place on baking tray lined with grease proof paper and brush with beaten egg.

I haven't made scones in ages but might do some savory ones this week, need something other than cake. I am not over keen on making anything when you have to rub fat into the flour, I just hate that sensation on your hands
In the past I have melted the butter, added flour and mixed with a fork breaking the clumps up until it gets to the breadcrumb stage

I have just made these http://www.bbcgoodfood.com/recipes/7655/oaty-raisin-cookies as I wanted something that used wholemeal flour so they are healthier for DS, they are ok but taste a bit too healthy for me lol. Hoping DS will like them as an alternative to all the cake we keep eating0

oooh - I'm trying to kick start healthier eating so my waistline doesn't get too generous so these will be going on my list for next month's cooking - I wonder if a few cheeky choc chips chucked in for good measure would lessen the 'healthy' aspect of them!!! :rotfl:

Ok. Here's today's efforts. One white loaf and one malted grain. I've got another batch of white dough proving as well as husband is a bread munching machine!!

Been riling through the cupboards to decide what to make this weekend and I've run out of caster sugar, so that's anything sweet out!
Found a pack of frozen puff pastry in the freezer so I'm thinking I might make cheese and marmite pasties. Hubby and I can use these for work lunches as well then.0 -

I'm currently cooking a chocolate fudge cake without butter (using oil instead ) I had no golden syrup either lol so not sure how it will taste (I used honey instead) I'll post a pic once done and give you a taste verdict too6 kids & 2 adults will be trying it so i'll ask them all for a score out of 10 (they love scoring my food haha)!

They came out more like rock cakes than cookies, I also reduced the amount of sugar in them to 40g. Personally I didn't like them but DS thought they were yummy so will definitely be making again as they are fairly healthy as far as cakes go.
looking forward to hearing the verdict on the cake, I always substitute golden syrup for honey if its only a tablespoon or so required as honey is better for you.0
