    Champagne ? At a three year olds party ? Oh Dear me Alex, I think your light bulb has blown ! lol
    Glad it went well and the respective out-laws behaved themselves.
    Hope your Mondays not as manic as mine .. off to catch a flight to edinburgh in a while, Couple of meetings and back here on wednesday morning .
    I really need some annual leave ! Still have most of the years allocation to take !!

    My eldest is also 15 now (his birthday was this time last month) and I can't remember the last time he gave me a kiss or a hug or said "love you mum" :( He used to be such an affectionate little one so please do make the most of every cuddle and nice thing they say ;) because when they are 15 and testing every limit you'll need those precious memories to get you through :p lol x

    :rotfl: I didn't buy any of the drinks, so lightbulb is still firmly on and of course, the 3 year old had no Champagne. ;)

    My Monday is quieter than usual, :). Hope your meetings go well and don't work yourself too hard, please.

    Thank you, Mrs. K. and I will keep that in mind. I hope our son doesn't become a too testing teenager. However, I'm well aware it may happen one day but I think we'll have many happy memories to get us through, then we can laugh when he's having a hard time with his own children one day. :rotfl:

    At the start of this thread, having enough confidence to fulfill your sons greatest birthday wishes, stand up to both families, work as a team with mrs k, invite the village in, and get FREE champagne, seemed too many very high mountains to climb. Well done :j:j:j:j

    When you set your mind to something you are very good at seeing it through, so good luck with the counselling. You need to find a way of improving your depression, as it is the only thing preventing your life being as enjoyable as yesterday. Am so pleased for your achievements and hard work. :D:D:D

  • Oh yes, did a spag bol in slow cooker this morning - mmmm! :drool:

    Prep time from nothing out to all in cooker & tidied up - 11 mins (including rootling for veg & meat in fridge, chopping, opening tinned tomatoes & ages finding where DC2 had "tidied" tin opener & garlic press). When you think that'll do us 4 meals, it's a pretty timesaving device the old S.C.! :D

    Ingredients
    25g/1oz utter
    1 onion peeled and chopped
    1 clove garlic - peeled and crushed
    900g/2lb prepared mixed veg (eg potato, celery, leek, carrot, swede, broccoli, parsnip)
    900ml / 1 1/2pints vegetable stock (can use stock cube and water)
    2 x 15ml tablespoon tomato puree
    salt and pepper

    heat
    High 6 to 9 hrs or Low 10 to 13hrs

    Method
    1 Place butter in saucepan, when melted add onion and garlic and cook for 2 to 3 ins
    2. Add vegetables and cook for 5 to 10 mins
    3 Stir in remaining ingredients, bring to the boil
    4, Transfer to the slow cooker and relax



    (Just checked why the big time difference - if you want to do the chuck in method - no prep - use low and the longer cooking time)

    Well today has been lovely also but very busy. I'm now feeling a bit tipsy due to a meal out, OK, OK I know I shouldn't but we just wanted to celebrate one more time. ;)

    Thank you so much for this post, Bess. :) Yes, I couldn't have done it two months ago. Hell, I couldn't face sending my son to nursery and wanted to selfishly keep him for myself. I know this was wrong of me now.

    I too hope the counselling works, I've another session on Thursday then none for a fortnight.

    Mmmm this sounds lovely and would make a couple of winter lunches / suppers! Will have a go hopefully over this week. :)

    High - 4 to 6 hours, Low 6 to 9 hours

    Ingredients
    1 x 15ml / tablespoon oil
    15g / 1/2oz butter
    100g / 4oz bacon chopped
    1 onion - chopped
    1 clove garlic - peeled and crushed
    225g / 8oz mushrooms - sliced
    4 chicken breast (boneless and skinless)
    25g / 1oz flour (plain or self raising)
    300ml / 1/2pt red wine
    450ml/ 3/4pint chicken stock

    Method
    1. Place oil and butter in a saucepan and heat until melted
    2. Add the bacon, onion, garlic and mushrooms for 3 to 4 mins - transfer to spare dish
    3. Coat chicken in floour, add to pan cook for 3 to 4 mins
    4. return bacon and all others to pan add rest of ingredients, - stir well bring to boil.
    5. Transfer to slow cooker and relax.
