    Red Cabbage with Apple

    1 red cabbage cored and shredded
    1 large or 2 medium apples (I like Coxs) any variety, peeled, cored and chopped
    1 large onion peeled and chopped
    2 tablespoons dark brown sugar
    2 tablespoons red wine vinegar
    2 tablespoons red wine
    2 tablespoons of apple juice concentrate
    1 teaspoon of carraway seeds
    1 teaspoon of salt
    a vey good grinding of black pepper
    2 - 4 tablespoons of water

    put everything into a heavy based pan and bring it to the boil, turn down the heat to very low and give it a long slow cook for 1 and a half to two hours, checking liquid levels and adding another couple of spoonfuls of water if needed. It should be unctuously soft and sweet sour in flavour when it's ready. It's lovely with anything porky from sausages to schnitzle to roast pork and crackling.

  • DD is taking it so well, bless her. I did say that if she ever decides to have children and by whatever means, adoption, fostering, biological etc, I WILL be sending them Home after a weekend at Nannies having fed them large quantities of sugar! I have to get my own back somehow, she was born a month early after making a hole in my backwaters, hospitalised from 28 weeks on complete bed rest and enduced labour at 36 weeks. She spent 2 weeks in special care, never learnt to suck (high roof of mouth), slept no more than 4/5 hours a night, fed every 2 hours until she was about 12 weeks old and has spent the whole of her life asking 'why, what does that mean, what does that do' and requires you to have the patients of a saint! :rotfl:

    I love her dearly though and wouldn't have wanted it any other way, she is an amazing young lady

    We had goose for christmas, and I made red cabbage with apple (with the addition of chestnuts) as a side, also had celeriac puree. The cabbage went down particularly well, but I like to 'gather' well tried and tested recipes, so will add yours to my collection! I have a red cabbage on hand, so will give this a go at the weekend.

    Lyn, thank you for finding time in your busy birthday day to post that recipe. My late Mum made the most delicious red cabbage to go with pork and I've never been able to re-create it. Your recipe looks like it will go very, very close (if not better, even). There have been some cracking recipes on this thread, thanks to all who take time to post.

    On a lighter note, I got to meet the mayor of the town I work in today,,, then spent 20 minutes chatting to his wife about their car... We both own Audi tt roadsters. Although ours is the more powerful one.. lol we compared engine size, fuel economy and the luxury of heated seats and Germany engineering.... how's that for challenging stereotypes?:)

    Yawning. . So off to bed, but leaving a box of luxury chocolates and a selection of posh drinks for all to enjoy.
    ( well cyber based ones but the thoughts there.....)

  • Morning all, just a quicky as I head out the door, I've got a shiny new oven and wonder what is best to put on the bottom to keep it clean?

    I'm tempted never to use it as it looks soooo nice but I'm not sure that's a workable long term plan :)

  • Morning all,

    I hope those of you facing a tough time wake up feeling refreshed and ready to take on the day. MoS, your daughter sounds very brave and level headed.

    I didn't feel as if yesterday's work went particularly well, and when I went to the gym to clear my head I tried a new workout and left none the clearer. Still, the important thing is I did get some work done and I did go to the gym. Today I'm starting work a bit early as I have to nip into Uni to take care of a few things. I have to pick up some food to make my friend dinner tomorrow and still haven't come up with a plan. It needs to be simple as I won't have much time to get it started and it needs to be very healthy as she is on a very long weight loss journey and I do my best to support her even though I cannot begin to imagine some of the challenges she must have faced thus far. I have a couple of ideas so will think about it this morning.

    Happy to report I've had no side effects for several days now. They're reported to come and go for the first six months or so, so fingers crossed they'll mostly go! Feeling a bit more positive about it all anyway as at seems to suggest I might settle down on the new pills with minimal adjustment.

    Neighbours are at it again. Radio on full blast at 7, shouting in the street now. Fortunately we get up at 6, and their noise is motivation for me to get to my desk faster in the quiet part of the house!
