    what is baba ganoush? aubergines always seem to taste 'oily' when i do them

    Oh how did I forget, orange sweet peppers, I can eat them like fruit just pull the seeds and stalk out yummy! Brocolli was a fave until I ate it every day when I was pregnant and got sick of it, have it weekly ish now.
    One day I might be more organised...........:confused:

    Well, my favourite addition to any meal is mushroom but since that is classed as a fungus rather vegetable I have to say that I add peppers to almost any main meal that I make. They each have a different flavour - the red is sweeter than the green, for obvious reasons. Still, my favourite vegetable of all time has to be the butternut squash.

    It doesn't matter how badly you treat it (keep it in your fridge for a fortnight then cook it) or how you cook it (add it to a stir fry, steam it, bake it in the oven, cook it in risotto, make it into soup ) the stuff just bursts with flavour when you taste it. It is my absolute favourite and can't be beat.

    I'm delighted to say that the first leaves of my very own squash have now sprouted. can't wait to make butternut squash, sage and chicken risotto. DS says it is THE best meal he has ever tasted.

    Roast butternut squash and pears (Iknow pears are a fruit but they are lovely roasted with squash!) and mushrooms (even if they are a fungi) ooh and onions on a salad in a sandwich deepfried in batter etc etc etc...

    couldn't give my fav veg, there isn't one I dont' like! Grew up with a veg garden, you see, and there's nothing better than sneaking in and picking beans, peas, tomatoes straight off the vines and eating them! At least when your 9!

    Celeriac is good grated, mixed with mayo, whole grain mustard, thinly sliced onions, fresh parsley.

    And for those of you who havne't tried asperagus, DO try it! It's in season right now, so not too expensive. Dont' do much with it, I flash - it in a fry pan of water for 3 minutes - bring salted water to a boil, add prepped asperagus, leave to boil 3 minutes, drain, eat!

    To prep asperagus, cut off the last 1"-1.5" then peel the middle third if the skin seems a bit woody (likea brocolli stem) No need to do anythgin ewlse. Keep the bit you cut off in the freezer for soup. ONce you have enough you can make asperagus soup with it, but be prepared to strain the woody bitsout once you've pureed it!

    Asperagus Soup:

    Asperagus ends to = 1 bunch asperagus
    1 bunch asperagus (optional - add if you don't have a lot of ends)
    1 onion
    1 clove garlic
    1 stalk celery
    2 potatoes, peeled

    Chop up all the veg, saute in a little olive oil. Add a dash of salt + pepper. Add potatoes, and enough water to cover. Simmer until veg is very soft and potatoes are cooked. Puree with a hand-blender, blender or food proccessor until smooth. Sieve through a fine wire sieve to get the woody bits out. Adjust seasonings, and eat! Can top with a drizzle of creme fraiche, soured cream, yogurt, good olive oil, or fresh dill.

    I see a lot of you love butternut squash, sweet potatoes and the like. Is butternut squash the same as pumpkin (which I have had in Pumpkin Pie but wasn't enamoured)? Will really have to give them a try if I can find some at a reasonable price(in case we don't like them). We love all vegetables except parsnips (which I'm amazed have so many fans on here:eek:) and I assumed sweet potatoes were a bit parsnip-like in taste so I've never tried them:o

    I love so many too.

    Love purple sprouting with pasta, sundried tomatoes and blue cheese, yum yum!!

    Parnsips are lovely either honey roasted or in a curry.

    Sweet potatoes, either in a curry or baked like a jacket potato.

    Love sprouts too - but they have to be soft and mushy - mmmmm. Don't do any other veg like this - just sprouts honest!

    Love all veggies really, these are just a few of my favourites.

    I love veg, mushrooms, peppers ,tomatoes courgetes, broccoil ,spuds caulis parsnips and sweetcorn are faves. In fact the only things I hate are Broad Beans(I would rather eat my own foot than eat them!) beetroot and celery(although I do use them in stock and when cooking lentils) of all though its Broad Beans htat are by far the worst yeeecccccccccck.
