corn on the cob, Joel is also mad on it, brocolli or sweet potato, my boys will only eat mash if it has a sweet potato mashed in with it
i like most vegtables again for me its easier to say what i dont like
sprouts,cabbage,parsnips and cauliflower.

love purple sprounting brocolli and asparagus when in season mmmmm
you can do a million things with corgettes !! and they're yummy (got some mushroom, parmesan and corgette cannelloni in the oven now mm)
old faves like parsnips roasted, butternut squash risotto, Cherry tomatoes thrown into a hot pan with some garlic as a quick pasta sauce

A good place to look for veggie recipes is on the recipes sections of veg box delivery websites !! some great ideas on those0 -
Spring cabbage. Every time.
Stirfried with sesame seeds served with tuna steak and noodles.
Steamed with just about anything.
Leftover with some fried sliced potatoes and bacon.
It often doesn't make it to the pan if I'm hovering in the kitchen.

Oh just thought of another one: I love leeks!
Spaghetti leeks:
Thinly slice the leeks lengthwise.
Fry the leeks in a little olive oil but don't let them brown. Then add a crushed clove of garlic, stir in a heaped teaspoon of grainy mustard, two to three tablespoons of cream and a small handful of chopped parsley. Keep stirring until it's cooked through.

Boiled, mashed, roasted, chipped, dauphonise, grilled, baked.
Just as they are, with butter, with cream, with cheese and onion

Courgettes and Tomatoes!
Favourite recipe -
Courgettes - sliced thinly and fried until they are a golden brown
Tomatoes - sliced
Cheddar cheese - sliced
put a layer of courgettes, layer of tomatoes, layer of cheese and repeat till your dish is full ending with a layer of cheese. Cook in the oven until top is golden brown.
I've also made this using cheese sauce in the layers instead of cheese, and just a layer of grated cheese on top; we prefer it like this.
I think I might have got this from a Delia book originally but not sure. I can investigate if anyone wants the original quantities etc. I use 2 or 3 courgettes and 2 large tomatoes but obviously adapt to fit your dish... don't throw the string away. You always need string!
