well thought i would be brave and start a new thread!
i am looking to eat more veg, we eat quite a bit already but am a bit bored of the same all the time.
so i was wondering whats your favorite veg and what different cooking methods do you use to make them more exciting?

Courgette.
I like em grilled with balsmic vinegar on them, steamed with rich meat dishes, roasted with garlic and rosemary, stirfried with tofu in sesame oil.0 -
I'm trying to think of a fav. I do like Parsnips, it would be easier to say what i don't like :rotfl:
I don't like celeriac mash, rather bitty texture but I do like celeriac raw in salads, I peel it as if I'm peeling spuds then eat it like that.
Not keep on raw carrots either unless grated.
Meal wise i surposed roasted vegetables in balsamic vinegar and olive oil.0 -

Ohhh this is a toughie. I dont think I could name just one.
I love cucumber! I have some on the side of every meal in summer, nice and cold from the fridge. Or now when I'm having a "feminine" day I cut it length ways and get some sour cream and chive dip and munch my way through that!
I would say potatoes as an all round fav, but thats a cop out! LOL
I'd go for parsnip instead.........

Runner beans fresh from the garden just sliced and cooked in boiling salted water for a very short time. No need to dress them up with anything, just eat as they are.
Can't wait for this year's crop. Apart from salad crops and marrows it's about all we grow! I make sure we plant enough to eat some most days and freeze plenty as well. We ate the last of last year's crop of runners as part of our Christmas Dinner. Wonderful!0 -

I think my favourite has to be brussel sprouts! There's a great thread here on ways to make them a bit different: Brussel Sprouts.
Cauliflower and brocolli cheese is another one I love, sugar snap peas, spinach, kale, cabbage, asparagus....oh, it's so hard to think of one favourite veg!

It used to be carrots, but I can't stand them anymore why is it carrots taste horrible these days.
Sprouts, cabbage and bacon umm the list isn't very long I'm afraid!!! Even though I grew up on meat and 2 veg I am not that keen!0 -
sweet potato - I put them round my chicken why I do a roast chicken. Absolutely delicious.
You can also bake them like you would a potato.0 -
We had roasted carrots last night and they were devine! Fav though is parsnip, sweetcorn or swede.
