    Hello!

    Not been on here for a while, had my daughter's 2nd Birthday and party at the weekend so month has been manic leading up to that point!! Still I think we have done really well so far as it covers all the party food too and as we are away for end of the month, next week should be fairly cheap so I'm hoping we will be under budget this month!! Woohoo!!

    Declaring £388.22 for the month. That's a bit over what I expected but I had money left over in general spends so treated us to a few bits.

    My overspend for the year so far is just over 3 days budget so not too shabby, could easily pull that back with what we have in. :D

    Had some spends yesterday:

    £6.19 in M+S
    £4.09 in Mr S


    Dinners this week have been/will be:

    Monday (housemate cooked): Cod in a tomato fennel sauce served with rice and broccoli
    Tuesday (housemate cooked): Stuffed peppers in a tomato garlic sauce served with roasted butternut squash, red onion, pine nut and tahini salad
    Wednesday (housemate cooked): Same as Tuesday (had enough leftovers), but green salad as well
    Thursday (I cooked): Chicken in a tomato, dill and parsley sauce and pasta
    Today (I'll cook): Rice noodles with chicken, spring onions and green beans in a hoisin/chilli/lime sauce.
    Tomorrow (I'll cook): Not sure - will be out for lunch, so will grab something easy to cook from a supermarket nearby

    Need to buy a lime, rice noodles and milk today.

    Hey, looking to start back on the GC in June, so trying to use up a lot of stuff in my kitchen and I've just come across some porridge oats, and I was wondering if anyone had any good recipies for them. None of us like porridge, or flapjacks so those 2 are out, I was thinking of maybe a good biscuit recipe perhaps, I've had a look online but so far found nothing that tickles my fancy :D Hope you can help, thanks guys :D X

    Well i've overspent already this month and still have another shop to go :( Oh well, never mind i've still got quite a stash in the freezer and cupboards and am trying a different strategy as from June where I will do the 2nd purse challenge, so hoping that this will help me budget better ???? I am doing a lot better than this time last year where I have no idea what I spent on groceries but know it was shameful, but I think there is still room for improvement.

    2 spends to declare £18.03 in Te$co and £17.54 in Ald's :)

    Some small spends to report over the last couple of days - 97p on 2 litres milk, £1 on cat treats and 80p on salad in Mr M on Wed.

    Plus 15p last night on a YS white sliced loaf in local Mr T garage, which has been stashed in the freezer for when OH is hungry and wants a slice of toast.

    New budget starts today so i'm declaring at £177.92/£185 which I am really pleased with :D

    Sticking to the same budget next month which no doubt I'll find tricky as it's a five weekend month and I've run down stocks a bit. Next four weekend month I'm contemplating lowering the target again, I must be mad...

    See everyone in June I'll keep chekcing this thread for any recipes to be added to the index however)!

    Not sure if it will work with porridge oats but maybe try crushing them up even more and use as a base for a cheesecake? I have just done this with 3 packs of Belvita Breakfast Biscuits that had been around too long and gone soft! I am hoping to make a cheesecake tonight for my daughter's second family birthday party tomorrow! :)

    Add them with flour mix for crumble. If you Google there are also lots of muffin recipes that use oats eg Banana muffins

    Also if you look right at the beginning of the GC, there are tons of recipes and one is a hobnob type recipe - someone here will know the one i mean ...by Twink, i think)?

    hey all... i don't normally get on here over the weekend and it's payday on Tue so i am off to June

    Bust my budget again this month but will try and keep to it next month.. not beating myself up about it though as (again) at least it has kept me mindful of what i'm spending and also has made me a bit more creative in the kitchen trying to cook with what's already there...
