    I have 400g of cooked pork (from Sunday) and am struggling to think of something scrummy to do with it for tomorrows evening meal. Any suggestions would be appreciated......

    Sweet and sour pork or stew/casserole or just slice put in dish cover with gravy warm through and have with veg and mash

    I make a "leftovers pie" using pork or any leftover meat really.
    Line a pie dish with pastry, put the leftover meat in along with whatever herbs you fancy, you can add mushrooms or some chopped spring onions at this point too. Add 2 beaten eggs put on pastry top, brush with remaining egg (I use what's left in the jug after beating them). bake until golden.

    I am just working out my meal plan from Saturday onwards and am planning on having roast pork with veg/pots on Sunday (I get a veg box tomorrow)

    Only thing is I usually find pork is really hard or chewy the following day..:confused: .has anyone got any tips as to how I can use it for leftovers in a meal on Monday...

    I would get a roast chicken but dh has asked for pork this week :rolleyes:

    I should get some lovely veg tomorrow so if poss would like to use it (so something that goes with/uses veg and pots would be good)

  • my left over pork i tend to either cut in to thin slices and warm in gravy or again cut thin small strips and do a stir fry with. I also cover with cling film after the initial meal.

  • Hi all,

    We had a big roast dinner on Sunday which was fab - and had enough for cold pork and bubble & squeak for tea last night too (yum!).

    I'm wondering what to do with the rest of the pork though, other than for sandwiches!?

    What do you all do with roast leftovers? I was thinking maybe curry... but no idea on a pork curry...
    Any help much appreciated...
