Leftover Pork

Please can anyone suggest dishes to use up lots of cooked roast pork???

    Stir fry?

    Savoury rice?

    I cut some up into strips once and then poured Yorkie Pud over the top (like a Toad In The Hole) .... my family thought it was wonderful!

    Some of it you could mince up in a food processor and use as sandwich fillings.

    Mince it up, make up some sage and onion stuffing, mix the two together, put in a loaf tin, cook in a moderate oven for about 30 mins to make a meatloaf?

    Cold slices with chips and gravy? (lurvely!!)

    Cold slices with mash and pickles? (like Boxing Day ;) )

    Layer in a dish with some par boiled potatoes that have been sliced, put some pork gravy between layers and cook like a speedy hotpot?

    Make into sandwiches, then fry in a little butter: served with a green salad/coleslaw?

    That's all I can think of from the top of my head :(

    Slice it up, layer between greaseproof paper. Wrap appropriately ... freeze!

    Will yield a few more roast dinners if you defrost just the required number of slices - no need to heat up, just pour over fresh hot gravy, roast potatoes ... no one will notice ;)

    Queenie, you really are a mine of information - as are everyone's elses suggestions. Thanks so much for these, I'll certainly be making good use of these. Does anyone have a yorkshire pud receipe they wouldn't mind sharing, I'll search for one in the threads as well, but thought I'd ask before I forget!!!!

    115g Plain flour
    3 large eggs
    1/2pt milk
    pinch salt

    It's a Jamie recipe and produces lovely yorkies yummy.gif

    Secret to producing perfect yorkies is leave batter to stand an hour or so before using, use beef dripping if possible, but oil will do, and get it as hot as you can before pouring batter in. Even place the tin on the hob while pouring to keep heat up then get it back in oven as fast as you can. Cook in hot oven (gas 7) and don't open the door for at least 30 mins by which time they should be cooked ;)

    Pork and apple risotto just add cooked pork and some chopped apple at stage 3.
    When life hands you a lemon, make sure you ask for tequilla and salt ;)
