    Thank you all.

I've also found some additional suggestions in the index, so I have LOADS of ideas now.

    Thanks again
  • I slice mine and freeze it, then defrost it and reheat it in gravy. Sunday lunch mark II ;)

p.s. tesco do a fantastic rolled joint that is very cheap and very tasty.

    Pork sandwiches aren't very appealing.

    Thanks in anticipation.

But pork, sliced thinly, in fresh bread, with generous applications of stuffing and apple sauce is one of my favourite sarnies.

I make a curry with leftover pork. Soften onion and garlic in oil. Add tinned tomatoes and some Patak's curry paste and water. Add cubed meat and simmer for about an hour. Serve with rice and salad.

Pataks' sauces are great, aren't they? They come the closest to restaurant curry that I have had (from a ready made sauce I mean. Obviously CurryQueen'scurries are the closest.
  • Pork, cut into smallish bits, stir fried with chopped apples and leeks is truly delish

We had roast pork on Sunday too. I made the left overs into a sort of goulash which we had with pasta. I chopped an onion, some mushrooms and a red pepper and sauteed them in a little oil and butter then I added the left over pork (chopped into pieces) and approx half a pint of milk and 2 large desertspoons of paprika. I left it simmering gently for about 10 mins them added a little cornflour and water to thicken and a little salt. I then left it (not cooking) for about an hour for the flavour to develop before reheating it when I'd cooked the pasta. It was very nice.

We had pork on sunday and yesterday I used the joint up by making sweet and sour with rice
  • For once there was leftovers from the roast pork I cooked last night. I'm not going to throw it away, and 18 brother in law has said he'll have it for dinner instead of the dinner I've got for tonight! Wahey!

What should I do with it. It's sitting in the fridge at the mo in the "kinda" slices that OH cut it into last night.

I was thinking of chopping it and heating it in a saucepan with gravy so it doesn't burn. Anything more inspiring that doesn't take long as there's only really enough for one person?
