    Hmm, never thought of the microwave. OH seems to think it's evil! But then he's not the one doing the cooking.

    We'll probably be eating spuds with our dinner, so the normal reheating sounds good. I'm a plastic biddy, stirfry, what's that about!:rotfl:

    how about something like a special fried rice... cook the rice, shred the pork, boil some peas, fry an onion and scramble a few eggs then throw it all together and mix into one gorgeous heap of lovelyness yummmm i love meals like that! best eaten with lashings of sweet chilli sauce:D

    Not technically shepherd's pie if made with pork but nice anyway

    NYT SHEPHERD’S PIE Serves 4-6
    NYT cook book

    1Ib cooked lean pork or lamb, cut into ¼ inch cubes
    2 tbspn butter
    1 cup finely chopped onion
    at least ¼ cup each finely chopped carrot and celery
    2 tbspn finely chopped parsley
    3 tbspn flour
    2 tbspn tomato puree
    ½ cup dry white wine
    1 ½ cup chicken stock
    1 tspn Worcestershire sauce
    freshly ground pepper
    1 cup sweet corn
    2 or more cups mashed potato
    ½ cup grated cheddar cheese,

    (1) Preheat oven to 350F, 180C, Gas 4
    (2) Heat butter in a saucepan, add onions, carrots, celery and parsley, cook stirring until onions are soft
    (3) Sprinkle with flour and stir with wire whisk
    (4) Add tomato paste, wine, stock, Worcestershire sauce and pepper, stirring rapidly with whisk
    (5) Simmer for 10 minutes, stir in meat and corn. Cook for further 5 minutes
    (6) Put meat and sauce in 7 cup baking dish or casserole, cover with potato and cheese
    (7) Place in oven and bake for 30-45 mins until piping hot and cheese melted

    Mmmm - I think I know what to cook tonight! Cold cooked pork has always gone to waste here, sadly - but that's not very money-saving, or planet saving either.

  • I like to make rissoles out of leftover meat...can be beef, pork, chicken or turkey - esp. good this time of year.
    I got the recipe several years ago from a cost-concious cook book by Maggie Brogan.
    PREP Time - 20 mins Cooking Time - 30mins

    450g potatoes, peeled and cut into pieces
    225g cold cooked meat
    1 onion, peeled and grated
    1 tablsp Worcestershire sauce
    salt and freshly ground black pepper
    1 size 2 egg, beaten


    1. Cook the potatoes in boiling, salted water until tender, about 12-15 minutes. Drain and then mash.

    2 Meanwhile, mince or finely chop the meat.

    3. Mix the mashed potato, meat, onion, Worcestershire sauce, salt, pepper and egg and bind well.

    4 Divide mixture into 4, roll each in flour and press into patties about 1/2" (1cm) thick.

    5. Shallow fry for 10-15 minutes on each side.

    Great with baked beans or a potato salad and greens.

    I roasted far too much pork yesterday and there's too much left just for sandwiches. I wondered if anyone had any other ways to use it up?

    I make pasties with left over pork.

    Cook a carrot, an onion and a potato. (I normally save some from the roast dinner.)

    Mince the meat, mix all the ingredients together with some gravey.
    Make pastry, roll out, use a saucer as a template to cut out a circle.
