I normally label and freeze leftover roast pork. When I have enough little packages for a meal, I defrost and reheat thoroughly in some gravy in the oven. Yummy.

I've just used some left over roast beef in a stir fry so you sould do something similar.

Heat some oil (I used a chinese stir fry oil) in a pan, add thinly sliced strips of carrot, big chunks of onion and some sliced peppers and start to cook. Chop up your left over meat (I did mine in little strips). I added some chilli and garlic from a grinder and then stirred in the meat. I threw in some sake and then quite a lot of sweet chilli sauce and some ginger and cooked until very hot and the sauce was bubbling. Served with steamed white jasmine rice. I haven't had any yet as I'm not hungry but the bit I tasted was lovely and my son has just gobbled a huge plate full down.

I usually for left over pork with oriental flavourings - in fried rice, noodle soup or or spicy little rissoles with chilli, ginger and garlic

Tonite I made a delicious lasagne with my left over pork

I mixed the finely diced pork with a home made tomatoe sauce , made a bechamel sauce into which I added finely chopped broccoli, then layered
the pork, sauce, sliced mozzarella cheese and lasagne sheets, topped off with parmesan cheese and baked in the oven for 40 mins, tho I say it myself it was absolutely delicious and something I will defo do again

    Thank you so much everyone!

Who would have thought there were so many lovely things you could do with leftover pork? I don't think I will have enough leftovers to try all the things I want to make!!!!!!

Must add that I made a dinner purely out of our Christmas leftovers and hubby said it was the best thing I have made in ages!! He didn't know I had made it out of leftovers and was really shocked when I told him :) lol

I know you aren't meant to reheat pork on the day, but where do you stand on refrigerating it later in the day and cooking it from cold the next day?

I've heard so many different stories on pork and I know it's a delicate bit of meat.

Would we be ok marinating the leftovers and cooking it tomorrow?

I hope this is in the right forum on the site and everyone knows what i'm talking about!

    Thanks

    Hello OP,

I assume you mean you have leftover roast pork!

If this is correct, I would recommend slicing the meat, then reheating it (thoroughly) in gravy. You could do this today or wrap the sliced meat and refrigerating it for a day or two.

Not sure where marinating comes in??

We have marinated pork before with a spicy sauce and it tasted superb...

I meant we have leftover pork from today's dinner, which we usually let cool down and then stick in the fridge for sandwiches. What I mean is instead of using for sandwiches will we be able to cook this leftover meat tomorrow?

Probably a silly question but better safe than sorry!
