Leftover Pork

how did it go? i tried marinading cooked pork (i had leftovers and no raw meat) for a stirfry the other day (one of the wang chai ferry box kits) and it didnt work AT ALL.. was pretty horrible actually... didnt take the flavour in any way shape or form...
that might have been the box rather that the fact that it was cooked - I often marinade cooked meats to add more flavour and moisten a bit and its good, not exactly the same as raw but still goodPeople seem not to see that their opinion of the world is also a confession of character.

Haven't done it yet. I ended up putting some nando's marinade on it last night for tonight, might bung some curry on top because I cant see it coming out very nice! I've STILL heard people say that re heating pork can be dodgy.
We all had reheated leftover pork (twice) at the weekend, and we're all still hereIn fact it worked so well that I didn't have enough leftovers to try all the suggestions that I wanted to so I bought two more joints from Mr T this morning for the freezer cos they are half price

Well you lot know alot more than me and my missus.
We were either gonna cook / re-heat the now marinated pork.
Or do a jar of curry sauce on the hob and put that all over the cold meat. (although that may taste , not nice, now that we've put the nando's marinade on the pork?!
If we do just heat it up with the marinade on how long do you recommmed doing it for and on what temp? Last thing I need is time off work with a self inflicted illness!0 -
Oh and by the way its now chopped up pork, not a big bit just small chunks, but more than enough for a dinner0

Hi there
I need some inspiration ~ I did a massive leg of pork in the SC monday which was yummy - when then had left overs yesterday in chinese pancakes with hoi sin sauce very yummy!! but I still have loads left over & no idea what to do with it - any ideas welcome!!!
Also can it be frozen? if so should I slice it & freeze it & how long for etc
many thanks

This sounds familiar - I've spent the past few days using up a rather over-sized joint of slow-cooked pork, too!
I sliced some of mine to have in sandwiches with salad; the rest was used half in a lentil and veg stew type of thing, and half in a red Thai curry (which goes surprisingly well with roasted / slow-cooked pork). It would also have been nice in a tomato sauce to go with pasta, I think, but I'd run out of pork by then.
If you can't finish it all then I don't see why you couldn't freeze it: I'd probably cut it into slices or cubes so it's ready when you want to use it for something.

Hi boredjellybean
I would slice it and freeze it in small portions. It can then be defrosted and used for sandwiches or a full dinner in whatever quantity you need. If you get left over veg from another meal then you can put the two together with the addition of gravy.
When I cook any joint I try to do extra veg so that I can make up complete one person sized dinners that I can take out of the freezer on my way to work.0 -
There's a pork sweet potato & cider stew type dish in my low GI cook book I'm hoping to try soon. I don't see why it couldn't be done with cooked porkIt matters not if you try and fail, and fail and try again; But it matters much if you try and fail, and fail to try again.

thanks for the ideas - I might try the pasta bake idea
I am also trying to remember how my folks made pan hagerty as I am sure that used left over pork layered with onions & potatoes & cooked in milk or stock

Hi bjb,
There's an existing thread with lots of ideas for using up leftover pork so I've added your thread to it to keep the suggestions together.
There's a thread on pan haggerty that might help you with a recipe, from what I can see it's usually made with corned beef, but it should be fine with pork:
