    I confess that I tend to make it with a ready made Thai curry paste, as my attempts at making it from scratch have been less than successful! :o

    All I do is fry some veggies (whatever I've got or fancy) in a splash of oil, then add a blob of curry paste and cook for a few seconds until it smells nice. Then add the cold meat, some coconut milk (from a tin) and sometimes some stock (depending on how thick the coconut milk is). I also sometimes add some dried chilli as some brands of Thai curry paste are quite mild and I like my curries HOT! :D

    Leave it to simmer for 15 minutes or so until the veggies are tender and the sauce is slightly thickened, and serve with rice and a squeeze of lemon juice over the top.

    I'm so hungry now.... :(

    I usually casserole it, cut into large hunks add a few fried onions and pop in any leftover apple sauce from the roast dinner, add some form of liquid, normally wine or beer in our house. And then slowcook it in the oven on a lowish heat.

    I'm a very lazy one-pot cook!

    Hi Donna,

    I've adapted Delia's Normandy Pork to use up leftover pork before and it was delicous. If you don't have cider, apple juice works just as well.

  • We had left over pork, I fried up some veg we had lurking, added the pork and covered it with a 9p curry sauce (not old style i know but I wanted another glass jar for preserving) topped it with cooked pots and lots of butter and shoved it under the grill. It was a very nice spicy potatoe bake.

    The replies were added after I left work so I didnt see them in time sorry!

    I ended up chopping the pork, adding 2 sliced onions, 2 sliced apples, 1 garlic clove chopped, 2 carrots and a handful of frozen peas, then throwing in 1.5 pints of chicken stock and a bit of sage. Cooked it for about 90 mins on a really low simmer and it was delicious with mash! Absolutely gorgeous.
