I would stir fry it, just slice it up into thin strips and stir fry it slowly with a load of sliced up veg, and whatever stir fry sauce you like. Serve with rice or noodles.
It probably went chewy because you cooked it on too high a temperature for too short a time - I usually work on an hour per kilo, plus half an hour, gas mark 4 for pork, and mine is usually well cooked (as pork should be) but fairly tender. If you need a high temperature for crackling, put it on gas mark 8 for half an hour at the start of your cooking time to get the crackling started off. Don't forget to turn it down after 30mins though or it will not only be tough, it will be black!Trust me - I'm NOT a doctor!0 -
i've got a huge amount of roast pork left over from xmas day morning, apart from a casserole what can i do with it ?
i've searched the forum but i can't seem to find any recipes so a point in right direction would be fab.

I replied just as the thread was merged I think-so it has disappeared into the ether!
I like this with leftover pork its really really tasty, but I do use less tallegio.
otherwise I do it chinese style in a noodle broth with some greens, or sticky pork. but the lasagne is a new favourite.0 -

Just wondered what you would suggest for leftover pork? I believe you are not supposed to reheat it?? Is that right?

I would reheat it personally or you could add it to a pizza topping, a fry up (left over veg and meat mushed and fried) or a stir fry, i often reheat Sunday's joint on Mon and Tues for dinners, not killed any of my kids yet :0)I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)

Ive reheated pork many a time! I assume you mean by recycling cooked pork into a curry or similar? Ive even added it to stir fry veg without probs. as long as its heated right through I dont see any problem! come to think of it - what about those tv dinners etc - arent they reheated?0
