I have special fried rice tonight using left over pork. also add some peas, egg, onion and mushrooms and a spoonful of bean paste as I like mine spicy!!
Tomorrow night I have more left over pork in a noodle stir fry. onion, mushroom, red pepper, chilli and black bean paste, stired into noddles.0 -

Dinner today was a roast leg of pork, but it tasted pretty rubbish - mainly cos it was chewy. I've got a fair bit left (no surprise!). What can I do with it?
I have a slow cooker if that helps, but don't normally eat pork so I don't have a clue what to put with it, or whether slow cooking will help?

Could you mince or chop it up and then make a shepherds/cottage pie, adding lots of finely chopped veg and thickening it a bitDoing voluntary work overseas for as long as it takes .......

I mince cooked pork with cooked onion, carrots, mix with gravy and use to make the filling for home-made pasties.

Chopping it up in a food processor was exactly what I was going to say. Cook with onion and carrots in the gravy and then taste it before putting on a puff pastry crust.

you could chuck it the slow cooker with some apples & cider & a good grind of pepper - slow cooking should tenderise it & so should the cooking in alcohol.
All the alcohol will cook off if you are worried about serving to anyone or littlies or if you are really worried you could use apples juice as long as it isnt too sweet
