I usually would bung leftover meats into sarnies for pack ups, but as it's the holidays, and the whole saving money thing, I thought what about making an evening meal?
I don;t have much leftover, a small takeawy tub about 2/3 full.
I know you lot are full of great ideas, so can you insprie me please?

I sometimes layer left over roast pork in a casserole dish with sliced potatoes and sliced onions. Add some stock/gravy, cover and leave in a med/hot oven (160C) for about an hour.
Another idea for quick spare rib type dish- make up some barbecue sauce (tomato ketchup, soy sauce, brown sugar and a little vinegar mixed together) I couldn't tell you the quantities as I just mix them until they taste right when you dip your finger in. Cut the pork into strips, toss in the barbecue sauce and grill

Chinese roast pork with noodles? Belly pork works great with this-I tend to cut in up into big chunks, pour over some oyster sauce soy sauce etc bung in hot oven for 5-10 mins and serve with stir fried noodles and veg (could prob do pork in hot wok but it does go lovely and sticky in the oven0

Mince it up with a bit of beef mince and make meatballs in tomato sauce?
I love pork, veg and noodle stirfry too. Hugh F-W does a great marinade with soy sauce, demerara sugar, dried chilli, coriander seeds, fresh ginger and garlic, afraid I cant remember the proportions.Debt at LBM (20th March 2008) £13,607

loving the sound of the BBQ ish sauces, they sound great. Might do them in one of those sauces then serve in pittas with salad

Chop up the pork quite small (or whizz it for a few seconds in a food processor). Sweat a chopped onion in a little butter, add a tablespoon of flour to the pan, cook for a minute or so then take off the heat. Slowly add 1/2 pint of milk, return to the heat and keep stirring until it thickens. Take off the heat and add the pork and about a tablespoon of sandwich pickle.
Open up a sheet of ready rolled puff pastry, and spread the pork mixture over half of it. Fold over and seal, then slit the top layer of pastry several times. Brush with milk/ beaten egg.
Cook at about 200C until golden brown. Serve with veg of your choice- unlikely to need potatoes as very filling.Save £12k in 2021: Jan £1834.40, Feb £1692.810 -

so I want to do a barbeques style thing. I like the look of the ketchup/soy/suagr / vinegar mix.
Do I need to marinade, or just mix and then cook it?
I'm really looking forward to dinner now..:p .0
