Meal plan inspiration: Recipes for supersix

I was really inspired last week when Meadows posted a few recipes in response to the fruit I had in from last week's supersix. They change over this week and I was looking through my recipes based on what they've been posted to be and saw something that was perfect. I was wondering if we might start an ongoing thread where people could post recipes that use one or more of the ingredients on supersix for those of us who like to base our mealplans around it.
To get us started, I've taken these two lists from ButterflyBrain's post over on the £7/week board:
Super six from 24th Feb to 9th March
Little Gem Lettuce x 2
Spring Onions x Bunch
Lemons x 3
Chanteney Carrots ( size unknown)
White Cabbage.
Celery
All at 39p.
10th March to 24th March
Parsnips . x 500gms
Leeks. x 3
New potatoes . x 500 gms
Brown onions x 1kg
Carrots x 1kg ( regular carrots)
Broccoli x 500gms

It uses the celery and carrots, and I'd imagine a bit of cabbage wouldn't go amiss if added in.0 -

Prawn Spring Rolls

Ingredients
1 cup shredded cabbage (finely)
6 12 ozs shrimp (rinsed and drained)
13 cup sweet and sour sauce
13 cup celery (minced)
14 cup shredded carrots
20 rice (wrappers 6.5 inch diameter)
I have a slightly different recipe to this, but it had lots of ingredients and was quite a lot of work for not much result. I don't have sweet and sour sauce in, and don't like it. Nor do I have the spring roll wrappers and probably won't make it to a market to buy them--so instead I might try a "deconstructed" version where I put all the insides over rice with a homemade dressing. Prawns can be expensive so I might substitute chicken, tofu, a peanut sauce, stir fried beef strips etc.0 -

One Pot Chicken and Brown Rice:

Ingredients
1 tablespoon olive oil
4 bone-in, skin-on chicken thighs (6 to 8 ounces each)
Coarse salt and ground pepper
1 large yellow onion, cut into 8 wedges
2 celery stalks, cut into 1 1/2-inch pieces
2 medium carrots, cut into 1 1/2-inch pieces
1 bay leaf

Winter vegetable colcannon

675g/1½lb plain mashed potato, still hot
225g/8oz kale or savoy cabbage, cooked and chopped
225g/8oz carrots, peeled, cooked and roughly mashed
125ml/4fl oz double cream
125ml/4fl oz milk
6 spring onions, sliced
55g/2oz butter, melted
Not sure if the white cabbage would work, but still has carrots and spring onions.0 -
Lettuce & spring onions - you could make a soup - Very gently saute the spring onions in a mixture of oil and butter until soft, then add shredded lettuce leaves and wilt them. Now add vegetable or chicken stock and cook through then blitz and season to taste. Add more stock if it’s a bit too thick and you could serve with a swirl of cream, crème frachie and sprinkle with any remaining chopped up green onion tops and or croutons.
Lemons - for me would have to be lemon curd just because - I love it. Or lemon meringue pie another favourite here.
Carrots, cabbage and celery
- could be turned into a Chinese style salad or coleslaw.
You also have the base of a sauce for spag bol using the carrots and celery with some onion. Or finely cut the veg into thin batons and use for wraps or in Chinese spring rolls with perhaps some bean sprouts added.
Stuffed cabbage leaves - wilt some leaves then fill with finely diced veg carrots, onions, mushrooms, leeks whatever is in stock. Roll up the leaves and put into a casserole add some chopped tinned tomatoes and a sprinkle of cheese and cook.
Leek & potatoes -
soup or use in a gratin dish -- layer sliced leeks and potatoes add a white sauce and sprinkle over breadcrumbs and grated cheese. Cook.
Leeks use in chicken and leek risotto or mushroom and leek if you vegetarian.
Potato and leek salad (same as potato salad but use chopped leeks instead of spring onions)
Parsnips -
Again soup - spicy parsnip soup or just roast them. Parsnips chips never had them but have heard they are good.
Carrots & Onions -
Base for any casserole, spag bol etc or again roasted along with potatoes, parsnips so roasted veg. I add grated carrots and onions to burgers and meatballs.
Broccoli
- soup (yes I admit I make soup with anything and everything) Or dip into batter and eat with a garlic mayo type dip.
Broccoli cheese bake.
Broccoli lightly cooked and added to pasta with some creamy mushrooms and onions or bacon lardons.
Cook the broccoli and mix with cooked mashed potatoes - can add onions etc.MARCH £62.38/2500 -

Week 1
Coleslaw
Cabbage, carrots, celery and spring onions grated and mixed with mayonnaise
Celery soup
1 head of Celery chopped finely, 1oz/25g butter, 1 medium diced potato, a spring onion chopped finely, a squeeze of lemon juice, 1 vegetable or chicken stock cube or HM vegetable stock (if you use HM stock you do not need to add any water), pepper, 1 tbsp of flour and 1 pint water plus approx ½ a pint of milk.
Melt the butter and add the celery, potato, onion and flour, sautee lightly on a low heat until the vegetables are translucent.
Add the lemon juice, water and stock cube or HM stock and cook gently for 20 mins. Whizz in a blender, return to heat then add the milk and pepper to taste and cook gently for a further10 mins.

I have a lovely slimming world soup recipe, spicy parsnip soup. Chop 1 parsnip, 2 carrots, 1 onion and add to 3/4 pt of veg or chicken stock and add 1 tsp curry powder to taste. Boil until soft then blend. Very tasty and for those interested its free on extra easy xGrocery challenge June 2016

Brilliant idea to post recipes for Aldi super 6 we're so lucky to have an Aldi so close to us.Look forward to trying some of the recipes especially the soup in this cold weather0

Hi All - Good idea for a thread. Thanks for your useful ideas.
For Weeks 1. I shall make cabbage salad (Cabbage,carrots and celery)DH doesn't like mayo. and for weeks 2 Mashed carrots and parsnips(with a little butter), they will also be used in Bolly,soups an whatever else I can shove them in. Shalln't buy leeks as we still have some in the garden.
