Meal plan inspiration: Recipes for supersix

Thanks for posting this. I'd been a little disappointed with so much fruit lately, looking forward to the veg.
I'll do my favourte lamb recipe: buy a cheap (ish) leg from Farmfoods. Brown it then cook on a bed of carrots (chantenay probably whole), diced parsnips and sliced leeks (have plenty in freezer), stock and seasoning. 2.5 hours in low oven. Delicious!

I adapt it to suit/cut cost but it's a lovely 'adult' sausage casserole compared to the baked bean cowboy type.0 -
I've had a rethink on some of my things as it is going to be a busy week and I need to rely more on my freezer so I don't wear myself out. I do all the cooking for the freezer and then always feel I should save it:rotfl:
So--tonight we're having blackbean tacos with shredded lettuce and cabbage.
Tomorrow, we're having beef stroganoff with beef from the freezer with a side salad using, spring onions and some shredded cabbage.
Weds we're having a salad that uses celery and lemon, and i'll probably add in the rest of the lettuce.
Thursday we're having a soup based on freezer stuff--it doesn't use anything, but it uses up the soured cream from tonight and the stroganoff. I might do a side salad, although I doubt I'll have the energy by then.
Friday we'll be having freezer fish and chips, but I might do a coleslaw on the side if there is any cabbage left.
Saturday I think we're out visiting friends, but if that falls through then I'll keep aside some of the cabbage and use it with the peppers I've got in the freezer from when they were on supersix and make some sort of stir fry.
Not my best effort, but between time contraints and the fact that its the end of the month and we couldn't really afford any meat with what is left over in the budget, I think I made the most of it. Hopefully I'll get to try more of the above next week.0 -
As I love Chantenay carrots (they are the small, tasty ones) I would blanche & freeze them so you have really good carrots to go with future meals.
The regular ones can be used for coleslaw & soup0 -
Just bumping this, as it is change over on Sunday.
I noticed chickens were on offer this week--if they still are on Sunday then I'll probably do a roast chicken with new pots, parsnips carrots and broccoli.
Then, I'm thinking a chicken and leek pie with leftover chicken and a leek risotto. Will, obviously, stock up on onions
Perhaps a broccoli based soup for our soup this week...0 -
Right--Have just finished my meal plan this week-hopefully it will provide some ideas for another supersix fan:)
Sunday: Roast Chicken, new potatoes, broccoli, carrots
Monday: Chicken and Leek pie with lo chicken, salad with leftover bits from last week's supersix.
Tuesday: HM tomato soup, HM bread (could do a supersix based soup such as a parsnip, a leek and potato or a broccoli soup--but we aren't fond of some of those and my other recipes are quite high in fats this week so wanted a couple of nights without too much, plus I don't have to buy anything for it)
Wednesday: Broccoli Pasta Bake, Salad
Thursday: Aubergine stew (I'll use normal sized aubergines and follow this recipe: http://www.bbcgoodfood.com/recipes/1263669/spicy-baby-aubergine-stew-with-coriander-and-mint
Again, not a supersix recipe but it keeps our saturated fat down a bit and I only have to buy aubergines and yoghurt)
Friday: Fish, sweet potato wedges with that lone sweet potato I found in my box, whatever veg or salad things are needing to be used, or peas if there isn't anything.
Saturday: Leek and Pancetta risotto using Nigel's recipe, although I think i've long since simplified it and I definitely use cheap and a smaller portion of pancetta.
Puddings: I'll do another crumble tonight to use up last of HM custard from last night, then I'll make a greek yoghurt pound cake to use up the the yoghurt that won't get used for the aubergine stew recipe.
The only thing I won't be buying and using extensively off of supersix this week is parsnips. I love them when other people cook them, but can't seem to get my head round them. I think this is because I'd never seen or eaten one until I was about 24. Its going to be another stressful week, so I've decided against experimentation for now.:o0 -
Just seen the super six thread on the shopping board and it seems like the list posted has changed:
moonshineToday, 9:26 AM

Yes, just back from the shopping and it is indeed changed to what Kate has suggested.
Bit cross as it mean shopping was bit off, but still what I'd planned wasn't too much more expensive not on supersix so stuck to it.
Will see what I can come up with for next week with the fruit. There were no oranges out at out Aldi, but they were re-stocking today so perhaps just weren't out yet.
Hope I haven't led too many astray!0 -
This thread inspired me! I bought the cabbage last week and used half of it to make an Indian style stir fry (no good at linking - google cabbage stir fry and it comes up) which my husband and I had with chicken tikka one night (no rice), as an accompaniment to a curry another night and I polished the last bit off with an omelette (waste not want not). The other half I made coleslaw with and have been having it with salad. For a 49p cabbage, I think I got my money's worth. Couldn't get to aldi this week but will follow this thread with interest!

Great thread! I can't believe I have only just found it.
I really want to put more effort into meal planning around the super six as I am certain it will help me to save money.
Bit disappointed that it's all fruit this week. Was hoping for the leeks to make leek and potato soup
I have plenty in though so might have a 'use up' week or two and see what the next super six is. (Somebody on here gets info on what will be available, in advance which is super helpful)

Thanks--glad to see it is useful! I'll pop back in with ideas for next week when I get a bit of time to hunt around. The fruit is a bit challenging although we like it as we can't normally afford some of these fruits so its nice to have a change up:j0
