My grandchildren are half Mexican, my 3 year old grandson is a picky eater buts eats chilli. I was shocked when I visited, in Mexico City where they live, the majority of Mexican kids are fat and eat McDonalds. His other grandmother is always going on about Jack being too skinny.0

I learned how to make guacamole at the hotel we stay at in Mexico,
scoop out 2 avacados and mash roughly with a fork,
add
1/2 chilli
lime juice
chopped tomato
chopped pepper
chopped onion
and mix together
can be whizzed in mixer to be smoother

My daughter who is 14 as part of her school course work has to enter a competition with 4 other friends to cook a three course meal :eek: to serve 2 for under £10.
It has to be theamed and we have come up with after loads of suggestions , Mexican, The dishes themselves have to show lots of skills like chopping, frying etc and the whole cooking time from start to finish can be no more than 1 hour.
So far we have come up with
guacomole for a starter served with tortilla chips ( cut up baked tortilla )
chilli con carne with brown rice for the main and a ( no cook) white chocolate cheescake for pudding.
I am just wondering if anyone has any tried and tested easy versions of the above
also any ideas on how to decorate the individual cheescakes so that they have the wow factor (bearing in mind the limited cooking skills they have)
or if you can suggest substitutes

You could always layer the chilli in between tortillas and stack them up - you'll need about 6 - sprinkle grated cheese on the top and cook in the oven until the cheese melts. I'd be a touch concerned the cheesecake would have chilled throughly in only an hour if it's to be served immediately after. If that is going to be a problem I'd suggest churros instead because they're really easy to make and delicious. I first discovered them in Spain but then got the recipie from a mexican cookery book.My Doctor told me that "1 out of 3 people who start smoking will eventually die."
