Hi OP,
You don't need to cook the Taco shells. Just need to sort of warm them up in the oven for a minute or so and then stuff it with the filling you have prepared.
I think it is best to finish the taco shells in one go or else they will gone soggy. But then I remember the box of 12 taco shells are wrapped in two packs of 6 (?), so you can open one pack and save the other for next time.0 -
Try Mexican casserole, it's along the same lines as lasagne.
Serves 4 with accompaniment or 2 without.
You'll need
1 pack of mince of choice (beef does really work best but chicken is also good)
Pack of Mexican taco/fajhita seasoning (whatever's on special offer!) or a good mix of dried herbs, crushed garlic & chilli powder/flakes/fresh to taste
1-2 finely chopped onions
1/2 can chopped tomatoes
Can of kidney beans, drained
Chopped up red pepper (optional)
large drained can of sweetcorn, or equlivent of frozen defrosted & lightly cooked & drained
Large bag of tortilla chips (cheap ones work fine)
Enough grated cheese to cover the top, how much depends on the size of your casserole dish but you know what I mean.
Fry the mince, add the onions, seasoning & pepper until all browned. stir in the tomatoes & drained kidney beans. Set to one side.
Puree the sweetcorn with a blender until it reaches pouing consistancy. You might need to add a little milk to thin a little, use judgement.
Put half the mince in the bottom of the dish then dollop half the sweetcorn puree on top. Add a layer of the tortilla chips, then add the remaining half of the mince then another layer of tortilla chips, then add the remaining sweetcorn & top with cheese. Bake at about 200 degrees until the cheese melts (cook longer if made & chilled in advance).
Delish with a cripsy tomato salad & garlic bread:D

thanks everyone (i've been offline for a while) and thanks button not working. I've saved the mexican casserole recipe and will be making enchiladas when i get another delivery. As it happens I cancelled this online delivery cos I got so much food reduced one night in Sainsburys (enough meat to last a fortnight :T )

Nachos Grande - easy and delicious!
Brown mince meat with garlic and onions. Add chilli powder (from a teaspoon upwards depending on how hot you like it) 1/2 to 1 tsp cumin, 1 tin chopped tomatoes and a squirt of tomato puree. Simmer till thick.
While the chilli is simmering get two of those processed cheese slices per person and place in a saucepan with a couple of tablespoons of milk per person. Heat slowly stirring constantly till the milk is well blended with the cheese and it is hot.
Use shallowish bowls and line each bowl with a layer of tortilla chips, top with a layer of the chilli, then a good dollop of the cheese sauce - serve.
You eat these by picking up individual tortilla chips with your hands and scooping up a generous dollop of chilli and cheese on them.
I make these as a main course and serve each persons intheir own bowl, but you can make a large communal bowl as a communal starter, or as part of a buffet.0 -

FOR MARINADE:
1 SHOT TEQUILA (not cheap stuff!)
1 LIME
2 TBSP OLIVE OIL
3 CLOVES GARLIC
HALF RED CHILLI
HALF BUNCH CORIANDER
1 AND HALF TSP GROUND CUMIN
HALF TSP OREGANO
HALF TSP PAPRIKA
4 CHICKEN BREASTS
2 TSP SOY SAUCE
HALF INCH GRATED ROOT GINGER
2 TSP BROWN SUGAR
TO ASSEMBLE:
6 FLOUR TORTILLAS
1 ONION, 1 BUNCH SPRING ONIONS, 1 RED PEPPER AND 1 GREEN PEPPER
CAJUN SEASONING
SOURED CREAM
SALSA
HALF PACK OF CHERRY TOMATOES CHOPPED FINELY
HALF RED CHILLI
HALF BUNCH CORIANDER
6 SPRING ONIONS
JUICE OF 1 LIME
CUT CHICKEN INTO STRIPS AND PUT IN MARINADE INGREDIENTS OVERNIGHT, STIRRING OCCASIONALLY.
MAKE THE SALSA BY COMBINING ALL FINELY DICED INGREDIENTS WITH A FEW TOMATOES THAT HAVE BEEN BLENDED TO A PASTE.
STIR-FRY OR GRIDDLE THE ONIONS AND PEPPERS IN A LITTLE OIL AND THE SEASONING AND DO SAME TO CHICKEN.
ASSEMBLE EACH OF THE COMPONENTS, TOPPING WITH SOURED CREAM AND SALSA.0 -
