I'd forgotten about roughing up tatties for roasting, may have to roast some tonight just cause i can!!!!0

I have always par boiled my potatoes, until you can put a knife in them and the knife slides out again, but not break up the potato, i suppose its about 10 - 15 minutes. i then drain and (thanks to MATH) add 2 - 4 tablespoons of oil (depends how many potatoes i have) give the pan a shake so the potatoes are covered in oil and slightly roughed up and then tip them into a tray and roast for 30 - 40 minutes, turning once. I get lovely crispy roasties, without using much fat!!!!!0

My mouth is watering as I read all these lovely suggestions - thankyou everyone. I have the potatoes on to part boil as I type, and the chicken smells delicious in the oven. I can't wait for my dinner tonight!0

I always par-boil my potatoes for about 10 minutes then drain the water and rough them up in the saucepan. Add to roasting pan and cook for roughly 40 minutes - delicious!! just cooking some now !!!!0

Yes i part boil them for about 10 minutes and then fork the tops. Then I melt some dripping in the oven in the bottom of a baking dish and put the potatos in.2008 Comping ChallengeWon so far - £3010 Needed - £230Debt free since Oct 20040

I make roast potatoes in batches and freeze them in family sized portions. I cook them slightly less than I normally would and then give them 20 minutes in a hot oven to crisp them up again. It takes the hastle out of timing them to be ready at the same time as the meat and vegetables.

Pink,
When you freeze them after roasting - do you place them straight from frozen in hot oil to finish roasting, or do you defrost first?0 -
Either works, but I think straight from frozen makes them crispier.

Thank you for that, I really should do it, or freeze them after par boiling (which is best don't know) because there are times I have potatoes left in a bag which I have to throw - just thrown a few out now as they have turned green!
I hate wasting food!!0
